Yes! It was my SD card port on my computer that was malfunctioning. So now, without further ado, my attempt at tilapia with mango salsa.

I always aim for leftovers. There are so many good things to do with them, and it's far preferable to having not quite enough. If I need to serve 4 people, I aim to serve 5 or 6, and know everyone will have their fill, and we get another day or two.

Looks yummy. I have only done tilapia a couple of times, but really liked it. Mango salsa is wonderful with it.

Looks pretty good!!! Although I'm not much of a fish eater, it looks wonderful.
Same thing with me for coffee and watermelon! I love the looks and smells of both, but can't stand the flavor!!


Ok, who's posting their dinner tonight? I am having leftover stuffed peppers, so I'm sure you don't all want to see that again!

Haven't a clue what it'll be tonight, though there's a lovely ripe avocado on the counter that will probably figure in it somehow. We'll see...

ok...I have been reading this thread for a little bit and I have just figured out what I am making for dinner tonight. I think I will make Shredded Pork BBQ with roasted potatoes and corn on the cob. I will have to post a pix later after I get it all together.

If I make anything nice for dinner, I'll post. I've been thinking about making either homemade lasagna or pizza, so if I get to it (read: if I have enough money
) I'll post pictures! I love to cook, but I have expensive taste, so it always costs too much for me.

Well, I went out for lunch today, and I ordered a grilled cheese. Imagine my surprise when I was presented with a large spinach salad. I looked in puzzlement at the plate and said to the waitress, "I think I said grilled cheese?" She covered herself in embarrassment and replied "OH! I thought you said goat cheese!" There was indeed a lovely chunk of goat cheese perched on the middle of the salad, and it looked very tempting, so I declined her offer to take it away and replace it. It was verrrrrrrrry good! Even though it wasn't really what I had my mouth set for. And now, I really don't want to serve another seriously salad meal for dinner. So the avocado is suppressed for a day, and we're having a hot meal -- pork patties with garlic mash and asparagus. Pic to follow.

Here's my contribution to dinner tonight.
Angel hair pasta tossed with olive oil and a little lemon juice, with grilled vegetables (onions, red and yellow bell peppers, and yellow squash) and chicken marinated in the same!

Sounds good. Looks good. If it weren't for my hungry sweetie upstairs, I'd invite myself over.
But I guess I'd better go rustle up a meal instead.

Don't have any pics, but my hubby picked up dinner for us as I managed to fall in a hole in the sidewalk yesterday and sprained a tendon in my foot and broke one of the tiny little bones on the top of my foot.
No cooking for me!

He picked up a roast chicken, some steamed broccoli and some lovely herbed polenta from a great little place near us with the sweetest little Greek old man for an owner. They marinate the chickens in garlic and herbs and shove garlic under the skin before they rotisserie them


So, we had that, and he also picked up two of their homemade brownies for each of us to have as a treat later. I freaking deserve it!
