Onion soup recipe please

I have opened my veg cupboard and it seems like my onions have multiplied overnight


Has anyone got a recipe for onion soup please? I made roasted tomato and pasta soup last week
and Pete made rocket and potato soup Monday which was also very yummy. But i cant find a recipe with onions


I much prefer to make my own as it taste so much better than the tinned stuff. So any ideas greatly appreciated

Mmmmm sounds good, i dont have any mushrooms today but i am definately interested in your recipe

Rocket
Also called arugula or roquette, this salad herb (actually a weed) enjoyed a burst of fame in the 1990s in bistros and posh restaurants and is now widely available in the packet salad sections of most big supermarkets. It has a peppery flavour and is delicious on its own, mixed with other salad leaves, on sandwiches or tossed through hot dishes such as pasta or rice. Also good in soups and sauces, whole or chopped, and as a base for chicken or fish.

I make this sort of onion soup it is nice with french bread.

French Onion soup

2 onions finely sliced, fried gently (in 1tbs butter and 1 tbs. olive oil) until they are all nicely brown add 1 pint beef stock (stock cube and water is fine) and a glass of red/white wine or sherry. Cook on a low heat for ten minutes. I put some grated/shredded cheddar cheese in the bowls and pour the hot soup over it.

This makes two or three bowls

That sounds delicious! I'm definitely going to be trying that - especially with the cheese!
