Its asparagus season!!

Its just a few days early but I picked 2# today-the first of the season.YUMMY

I pick until July 4th so I will be going on asparagus overload by the end of the month!!!
Any good recipes other than soup, or grilled. I have a good one with eggs for a brunch dish too!!

If you have an established patch like I do you can harvest asparagus for 8 weeks!!!

Well you start with asparagus "crowns" which look like a buch of roots with a liitle pointy tip in the middle. We dug a fairly deep trench and you slowly cover the trench over a period of time as the plant develops. I think it was at least 3 years before we got any good amt of asparagus. Then the each year your can extend the harvest time. The best directions I have are from a old copy of the Victory Garden book. We are also lucky to have wild asparagus which grows on the property line between us and our neighbors and also some spots at the far edge of our property. We think the wild stuff is actually a bit more tasty!! But around here the wild spots are fiercely guarded as their are "city folk" who cruise the ditches in rural areas looking for it!!

I LOVE asparagus! I take it and sprinkle with a little garlic powder, put in a little butter, wrap it in aluminum foil and bake it in the oven....mmmmmmm!

I posted a recipe in the Fundraiser section, for Asparagus, Egg and Arborio Rice Salad. It looks a little fussy to do, but really isn't, and is well worth the effort.

Also, when asparagus is plentiful, I like to do asparagus and ham crepes, with a little cheese sauce, or use some in an omelette.

Gail, I was surprised to see asparagus in my garden also. It's a bit earlier this year than last year!

I've already picked asparagus twice from my little patch...and today I finally got to burning off the weeds from last year. I know, I know, I should have taken care of the weeds before I got sprouts...but they came so fast!

The good news is, I found a few sprouts I had missed, so after the burn I had a few pieces of asparagus that were already cooked when I picked them! LOL! They tasted a little smokey...but were yummy just the same.

Maybe I'll take the kids for a walk tomorrow and get some of the wild asparagus from the ditches...I've never done that, but have seen people driving by and stopping for it!

Fran, I bet you're thinking of the way the Germans eat it! They like it white, so they harvest it before it's ripe, which is why you have to peel it. It's much tastier when it's green.
