Aaaargh!! I ruined dinner!!!

I just went to eat the wonderful meatloaf I made..and it didn't turn out!!! It was too liquidy or something...Grrrrr, I'm sooo mad and hungry

My poor boyfriend ended up having frozen mini pizzas for dinner, and I just had some nasty pasta sidedish...Ewww.

I never liked meatloaf until I tried this recipe. I hope you like it too!
1 can (10 3/4 ounces) Campbell's tomato soup
1 1/2 pounds ground beef
1/2 cup dry bread crumbs
1 small onion, finely chopped (about 1/4 cup)
1 egg, beaten
1 Tbs. Worchestershire sauce
1/8 teaspoon pepper
Mix 12 CUP soup, beef, bread crumbs, onion, egg, Worchestershire and pepper THOROUGHLY. In loaf pan, shape into FIRM loaf.
Bake at 350 for 30 minutes. Pour off fat.
Spoon remaining soup over meatloaf. Bake 30 minutes or more until no longer pink. (160 degrees F)

I used to make this for my ex boyfriend and he liked to do different things to food to make it even healthier for his daughter. Spinach is extremely good for you and high in vitamins and antioxidants. At his request I chopped very finely, some spinach (about a cup) and added it to the meatloaf when I mixed it all up. You can't taste it and it gives it a nice color too.

One thing I do when I make meatloaf... just about 10 minutes before it's done, I 'carefully' take it out of the pan it's in and transfer it onto a platter, then put sauce on top, then cook for a few more minutes. That's one way to avoid the excess liquid.

My former sister in law used to hollow out a circle in the middle (prior too cooking) and insert a glass upside down in the empty space (the space the same size as the glass), then that draws the grease and liquid up in that glass and away from the meatloaf. I haven't tried that myself though.

I think I put too much ketchup in it..the recipe called fro putting the ketchup on top, but I put it right in..I only noticed afterward..Ew, it was soggy!

I will try this one for sure..but no spinach for me
