What should I cook for dinner?

I have no idea what to make, so I thought some of y'all might like to share some favorite (and easy) recipes with me.

I'll share my favorite recipe with you. It is not low fat, but it kicks apples!

Chicken enchilada casserole.

Cook some chicken breasts, let them cool, and shred them.

Cook enough rice to fill the bottom of a 9 X 13 " pan with chicken broth and garlic.

In a large pan, saute onions and garlic in oil or Pam.

Add some jalapeno peppers and allow the mixture to get soft.

Add to this the chicken.

Pour in 1 to 1 and a half cups of sour cream or low fat sour cream.

Add a carton of sliced fresh mushrooms.

Allow this stuff to simmer on low until the mushrooms are soft.

When the rice is finished, place it on the bottom of the 9 x 13" pan. Place the chicken stuff on top. Bake in a 350 oven for about 10 minutes, then put some shredded cheese on top and allow to melt.


This is SUPER YUMMY!!!! enjoy!

Did you notice that all my measurements are inexact? Do you all cook that way or is it just me?

Update -- My husband brought dinner home tonight! Hallelujah! I do not have to cook!

I knew I made the right decision about him

I love to cook, but since I don't have anyone to cook for except myself, I usually cook lightly. When my children are with me, I cook box meals. When I am alone, I just eat canned foods. If I ever get a new husband, then I will cook more.

I didn't mean anything by telling you that. I just meant that somewhere buried in the archives is a huge thread of recipes from a lot of people. I stopped when I found the smaller thread when I did the search. If the threads were merged together the post would be HUGE!

... But this dinner thing is a daily drag, you know? Tonight --> veggie burger for me, cheeseburger for him. We are both happy.

It really is decadently wonderful. The mushrooms are the true secret to the flavor. It can be lightened up with FF sour cream, but watch for wateriness. I suppose you could stiffen it up with a little corn starch or rice water.... If you try it let me know how you like it.
