Within each breed, there is a lot of individual variation in temperament. Some individuals within a breed will be more bold and outgoing, and other individuals are more shy and nervous. If you have specific temperament requirements, you might want to consider getting an adult cat whose temperament is already fully developed (either a retired show/breeding cat from a breeder, or an adult cat from a shelter or rescue).
