Some people would call that poached, Heidi, but it's not. The whole egg goes into simmering water, without the interference of any mold or shape contraption, and stays there just long enough to set. Awesome just on buttered toast -- needs to be nice bread -- or as part of Eggs Benedict (toasted English muffin, back bacon or ham, egg, topped with hollandaise sauce is the traditional, but there are lots of awesome variations on the theme.) And that reminds me, I haven't done Eggs Benny for several weeks -- this Saturday, I think.Originally Posted by valanhb
