I'm making a salad since I have salad mix in the refridgerator and need to use it up before it goes bad. And I had some frozen tater-tots for lunch and dont want to od on greasey.

If I do say so myself, the duck pot stickers were awesome! Here is the 'recipe' I cobbled together.

I sauteed shitake mushrooms, angel hair cut green cabbage, and green scallions (both white and green parts) with fresh ginger, garlic and salt, in sesame seed oil. Once removed from heat, added sesame seeds, and bragg's amino acids (a soy sauce essentially).

For an hour, I marinated a 7+ oz. duck breast in garlic, orange juice and salt, w/a bit of flour (I was out of corn starch), then cooked the duck in olive oil over high heat initially, then covered and cooked 20 minutes over medium heat, turning often (and put in 2 tbs. of the marinade).

Once cooked, it was finely minced, then returned to the almost completely drained pan (left in a bit of the melted duck fat), and the bits were browned.

Next, mixed the veggie mix with the minced duck, and put a spoonful on a pot sticker wrapper, sealed then pan fried.

These were just awesome!

I had grilled chicken with lemon and fresh oregano, a salad with LF feta cheese and balsamic vinagrette, and some brown rice.
For dessert I had sugar free hot chocolate

I haven't had Burger King in so long! The one here in town closed down this summer


I had Pizza Hut - it was amazing!


I think tonight is Biscuits and Sausage Gravy....
