I'm honestly not sure yet... I am thinking of making some type of enchiladas. What are you having?

Not a clue. I don't get home from class until about 9, so by that time my husband has already eaten and I'm out of steam. I'll probably just eat a sandwich or a frozen dinner or something equally unexciting.

I already asked hubby to take me to a local Mexican place tonight. I am going to have the best frozen margarita!

There is cake for Lee to eat for dessert and I will have a tangerine or a banana.

Haven't decided for sure, but I'm feeling the need for some Taco Bell.

I'm having those mid-winter blahs and I really feel like a good home-made hamburger/cheeseburger so I'm going to stop at the grocery on my way home and get the meat and buns and have cheeseburgers for dinner. If my hubby is lucky I might even feel like making him his favourite skinny french fries. (I just hate cleaning up the deep fryer afterwards so I don't make them often.)

This might make me think of summer BBQ's and lift those winter blahs.

I had blackened Mahi Mahi tacos with black beans & rice at our local taco shop for lunch.
It was really delicious. I have a very happy tummy.

We had tuna "steaks" flavored with lemon pepper, homemade German potato salad (from yesterday, warmed up in the microwave), and salad.

Actually I'm starting to think maybe my BF needs to start cooking. Lately he keeps complaining that most of the stuff I make is either not diabetic friendly or if it is, the meal didn't taste good.

although the last time I made him make his own dinner he ate almost all the snack stuff in the house...
