Tonight I'm making Shake-N-Bake chicken breasts, and with that we'll have fresh snap peas and carrots and Clementine oranges.

I put the rest of the turkey carcass, etc. in the freezer yesterday, to give us a rest. The soup will come later. Last night was risotto, tonight is leftover quiche (from yesterday's brunch) with Caesar Salad.

ETA: Bad choice of salad. Should have done designer greens, as I had intended in the first place. Caesar was too robust for the quiche. It wasn't bad, but it could have been lots better.

It feels like we haven't cooked in ages, too, but I know that's not entirely right. I just haven't had leftovers for lunch all week.
So tonight hubby is making Tuna Helper.

In the future, how about using a pressure cooker? My dh bought me one this past year, and while I still don't use it, he does and makes the most incredible dishes w/gravy in less than an hour!

Tonight, dh is having ham and turkey sandwiches w/roasted yellow bell pepper and fresh tomato, on onions rolls, veggie and jalapeno poppers.

I'm having steak with a salt free mesquite blend seasoning, veggie, and haven't decided yet what for dessert...we have so much sitting here to choose from - frango's, plain dark chocolate, peppermint cookies, a Mrs.Fields Cookie basket, chocolate covered macadamia nuts...it's a balanced carb dieters nightmare or heaven depending on how one handles it. So far, it's heaven

I ended up making tacos (vegetarian - I love Morningstar Farms crumbles). I have the leftovers for lunch.

last night was pathetic, i think we had a half a hamburger each and a slice of tiramisu..

tonight I think is wing night so oh well. I'll cook on monday.

We had ziti with Morning Star crumbles (veggie meat) in pasta sauce. It was very good!
