My kitty has one whisker which curls and keeps poking her in the eye. Can I safely cut it without hurting her? This may be a stupid question and I apologize but I do not know if cutting it would hurt her or if it is like cutting hair or something!

Most Sphynx do not have whiskers and they do not have any problems, but from what I understand you should never cut a cats whiskers. Because your cat has a whisker that is poking her in the eye, you may want to call you vet and just ask them. I found this site that may be helpful as well. http://science.howstuffworks.com/question592.htm

As a rule of thumb, you shouldn't cut a cats whiskers. However, if it is poking her in the eye, it's ok to trim it back, it will not hurt her to do so.
Just be careful with scissors around her face, cats have a tendency to make unexpected moves.

Might be beneficial to use a nail clippers, designed for people.

Yes, I agree ... it's OK to trim that one whisker. The caution against trimming a cat's whiskers in the article linked to means don't trim ALL the whiskers, because a cat's whiskers have several functions that are important to the cat. Trimming one isn't going to affect any of these functions.
