muffin ideas?

Hi.

well, my muffin reserves have run dry. I always make lots of muffins and bring them to school as snacks. Now I'm all out so I'll be doing some baking today.

I found a recipe for "basic" muffins and then you're supposed to add anything you want to it - berries, raisin, nuts... you can even make savory muffins with cheese or bacon...

Sounds like a lot of fun. So now I'm trying to find creative flavors of muffins.

Here's what I thought about so far:
- pina-colada (rum, pinneapple and coconut)
- blueberry and lemon
- apple, oats and nuts
- raspberry and chocolate chips
- cheese and brocoli

does anyone have any other suggestions?

My mom always used to make some kind of Cinnamon ones, they are delish!!

A local bakery does carrot cake muffins with carrots, raisins and nuts. You could also do pineapple and coconut. Chocolate chip and peanut butter? Getting hungry now!

mmm... you guys are making me really hungry.

I'm not sure about putting actual peanut butter in muffins... but I might get some peanut butter chips. mix that with some chocolate chips. Yum! Or maybe peanut butter chips and bananas?

maybe I could find some "fancy" cheese like gruyere for my cheese muffins...

I'm thinking some cherry and nuts muffins would be good too. with some cinnamon

I'm gonna have a lot of baking to do today!!

Well, I love to cook, but don't usually bake (I don't like to measure), but this sounds fun. Can you post the basic recipe?
Cheese and brocoli sound great.
Here's a wierd one - taco & cheese leftover taco meat (or meat substitute) and cheddar...just thinking about what's in my fridge...

mmm... taco.
actually, I thought of making a jalapeno and cheese one but I think that would be better with a corn-based muffin.

here's the recipe:

I think for now I'll make
- pina colada
- cherry and almonds
- apple, oats and cinnamon (maybe with some nuts too)
- blueberry and lemon
and maybe raspberry and chocolate chips (I really wanted to do raspberry and white chocolate chips but I couldn't find white chocolate chips)
I also didn't find peanut butter chips

I usually make Cinnamon and Cummin I think thats how you spell it,
Or just get a block of chocolate milk, melt it and swirl it to the dough, its good too!!! ( you can use nutella too)
I dont have all my stuff with me so im unable to help

mmmmm I second the bacon and cheese one, yummy! I find adding bacon to anything savoury justs "kicks it up a notch".
The banana, choc and peanut butter one sounds good too. Have you tried the other nut butters? You can get so many these days, and they're all good for you and tasty too. My fav is hazelnut butter. I use it to make choc chip cookies...hmmm yummy! Always makes my husband happy to come home to my baking!

For the next round, you might consider cranberry and orange.

I'm a little scared of making a whole batch of muffins with chocolate... I'm a chocoholic so if I have 1 or 2 dozen chocolate muffins, I could end up sick after eating all those in a few hours

anyways, the first batch of muffins is in the oven. I made pina colada.
Problem is, when I was mixing the ingredients, I forgot to put the oil in. So I added a little bit of oil at the end. Well, I guess they will be low fat muffins. I didn't go easy on the rum though.

LOL! let us know how they taste!

they're ready!
and really yummy.
I think I'll keep using less oil than the recipe asks for... it's working really well.

anyone want to come over? free muffins!!
oooh me me! but I think I'll be over for the fourth batch (rasp & choc )

I think the fourth batch might wait till tomorow. I should really go back to working on my essays for tonight.

I made the batch of cherry and almond muffins. they'll be ready very shortly. I'm not sure how good they'll be but they look weird. Very pink!

well, today I made more muffins.

So far, I have:
- Pina Colada (pineapple, coconut and rum)... VERY good
- Cherry and almond... good but too sweet for my liking. I really shouldn't have used some of that "juice" that came with the cherries.
- Apple and cinnamon... AWESOME. I put tons of apples in it. It's so moist and yummy

and now I have finally decided to try the peanut butter and chocolate ones. I softened the peanut butter in the microwave and mixed it in along with some chocolate chips. They'll be ready in just a few minutes.

I'll have to stop soon because my freezer is getting full!!

I have recipes for maple/sour cream/pecan. Or raspberry/sourcream.
Pumpkin muffins?????
I have lots of frozen raspberries and cherries so I have to come up with stuff to make using them!!
