Chicken & Rice Casserole recipe?

I'm really trying to avoid going to the store
(tomorrow's payday.) Does ANYBODY have some sort of a Chicken & Rice recipe that does NOT use any cream soups in it? I think I've looked at about 100 and they ALL do it seems like!

I've got boneless-skinless chicken breasts (frozen), canned tomatoes, frozen green pepper, frozen onion (and a fresh one too) about any spice you could think of. Ordinarily we don't do a lot of cooking, but we're trying to budget these days and it's definitely less expensive to cook rather than buying prepared foods or eating out. I'll get some cream soups this weekend to keep on hand, but right now the larder's close to bare
....

I don't normally make chicken and rice cassole, but it sounds like you have the perfect making for a chicken caccitore type casserole!

Just choose any rice recipe you like, and have ingredients for, and fix it. Then add the chopped chicken breast to it, or use the rice as a side dish.

I like using a whole chicken stewed in a crockpot, then add rice the last hour. I don't add a cream soup because I don't like it. Some boullion or a seasoning packet left over from ramen noodles adds extra flavor. The rice gets a lot of flavor from the chicken bones.

Since you have boneless/skinless, fry up some of the peppers and onions to add. If you put in the stewed tomatoes, it will be like yummy red rice. Add whatever spices you like-my standard is garlic and pepper.

Sorry, I don't really follow recipes much, and sometimes you can tell when you eat my cooking. But you definitely have enough for a very tasty meal!

! Now why didn't I think of that
? I've even got some burgundy that I keep on hand, I guess 'cause I didn't have the fresh peppers I usually use (on the rare occasions I make the stuff) it didn't even occur to me!

That's what I love about TCS, somebody's thinking (even if I'm not
!)

Rose, it isn't neccessary 2 use any Soup in your receipe. Improvise! If U hve it, use Tomato Sauce,or Juice, Broths. If U hve any Cornstarch or Flour, U can Thicken the way U like at the end. @ Very Good Places 4 LOTS of Recipes- Cooks.com &
Cooksreceipes.com. Thy r Reader Submitted Receipes & U will see lots of comments on Ingredient Substition, Omitting, etc. Really Interesting Sites I Visit a LOT!!!

A lot of times when I am out of something and improvise, I end up with something better than what I was originally going to make!

Yup, I hear ya, but then try to reproduce those results
! I'll be getting started on this in an hour or so, Sun's not due home 'til 6:30ish.

I have a Chicken and Broccoli casserole recipe that I modify. Do you know how to make a white sauce??? Also add mayonnaise (trust me) for moistness. Or sour cream too. But a basic while sauce should do the trick!!

It would have to be the white sauce or sour cream. Trust me when I say the significant other can taste a MOLECULE of mayonnaise
(or mustard, or celery.)! Those are the three things that he absotively will not touch. I think I've already got my head set for the pseudo-cacciatore (just thawed 3 chicken breasts,) but I'll add that idea to my list of "things I can make when I have nothing to make them with"
