Getting cat to put weight on

After changing Pebbles food, I finally seem to have found something that will help her gain some much needed weight - although at 3.5kg she wasn't seriously underweight, she was rather bony. I have been feeding her when she wants, rather than sticking to 2 meals, and feeding her as much as she will eat, which may have helped. My only concern is whether she will be happy going down to normal helpings when she is at a decent weight (not 100% sure what that is yet, she has been up to 4.06kg and was starting to look podgy, so I don't think she is a cat that can carry too much weight). She is still being seen by the vet nurse, but only has to go up every 2 months now, rather than every month, although I can take her up sooner if I feel she needs it. I don't normally get underweight cats, the only other two I have had had liver probs, so never succeeded with them. Pebbles has been tested for practically everything, so she is healthy, just on the thin side. Any tips?

Well, she has been seen regularly at the weight clinic, they know I have changed their diet, and she just said that it is obviously working, so they don't need to see her for 2 months. They have never said how much she should be, and how much she should eat, as she isn't too underweight.
