Fall is FINALLY here! It was only 60* today, tomorrow the high is supposed to be around 50*, and our first hard freeze tomorrow night.

SO, I'm making my homemade chicken noodle & dumpling soup.
It's SO yummy! And it will be even better tomorrow when it's really chilly.

A man after my heart!
I did have corned beef 2 days ago and it was sooo good! Boiled the old fashioned way!

Tonight is just fish and chips

Fast no-fuss meals these days -- tonight: omelettes, stuffed with lots of ham and Jarlsberg, topped with salsa. Yogurt for dessert.

Oh, God, I know. It was almost 90 here for the past 2 days. This maddness needs to end! (And it will tomorrow when that coldfront hits us. Highs in the 50's...yay!!)

Anyway, I made veggie tacos for dinner last night, which I am still convinced taste exactly the same as regualr tacos when you use ground up seitan for the 'meat'.

We had breaded chicken with peas and scalloped cheesy potatoes! It was pretty late too since I got home from school at 10:30....Zack had a beautiful bouquet of flowers waiting for me too!

Well I changed my mind and I must admit it came out soooooo good! I stopped at Super Wal-Mart and got a pkg of frozen tuna. It is only $5.23 for 3-4 small fillets. This package had 4. After thawing, I marinated them for a few minutes in some leftover ginger dressing that I made a few days ago, then I sauteed them until they were medium rare. We had them on fresh kaiser rolls with lettuce, tomato, and onion. Mmmmmmmmmmmmm...

Well when I got home last night, one of our friends mom's had made home made butter noodles....so good! So I made them for myself, with a chicken breast cut up, and then cheese and garlic biscuits, and then for my DB, I made shake and bake chicken strips and homemade mashed potatoes, and corn

It was like a mini buffet!!
