YUMMY!! Chicken & Asparagus Stir-Fry!

You know what? WW is the bestest thing I've ever done.. I just eat and eat!

Last night we had chicken and asparagus stir-fry and we put some aside for lunch and it's JUST SO GOOD

Chicken and Asparagus! Does sound yummy. If you like chicken you gotta try cooking one like this: Take a whole chicken and saw the backbone out with a serated knife. Some poeple use shears. Wash the chicken... dry it and put it in a baking pan opened up skin side up. Heavily season the skin side then turn it over and heavily season the inside. The chicken is now skin side down and ready for the oven. I like to use "Montreal Steak Seasoning" but you can use salt and pepper to try the method. Pop the bird in a cold oven at 450 degrees for an hour and 15 minuits and your ready to chow. How simple is that? Once you try this method you will agree it's the most simple fastest way to cook a chicken you've ever tried. The High Heat doesn't give the juices enough time to dry out.

Oohhhh that all sounds so good!!


My mom also does WW and she loves it as well, such a great program and they have such great recipes too! Mmmm....thank goodness its almost lunch time!

I just figured out WW was Weight Watchers. Blush... Well the chickens not bad as far as that goes. I just peel of the skin. The seasoning runs off with the juices and adds great flavor.

I love stir-fry! Chicken and asparagus sounds good. Right now we have so many sweet peppers from the garden that I'll probably do chicken or turkey with peppers, onions, and tomatoes tomorrow night.

See I generally hate chicke, I only like it in chinese food, but this was sooo good, I don't even miss takeout!
