You mean a stray not a spray right? Or does your stray spray as well? He is not used to pooping in a litter pan- and he needs not one pan but he needs two. Cats living outside will never poop and pee in the same place- it is to dangerous for them. Set him out two litter pans, put then close to each other in the same room, but not jammed up against each other. Make sure they are in a private area where he can escape quickly if need be.
Buy a bag of potting soil and mix plain clay litter with the potting soil and put that in the boxes. If that doesn't take care of the problem than your cat is likely ill and needs a vet check-

You want to be sure you don't let the potting soil stay in the box for more than three days, or you will have a bug infestation. Switch it out every three days, but putting new mixtures in it, and keep the boxes as scooped out and clean as possible.

Thank you for adopting an older stray-

If he was an outside or ferel cat he might not like or reject the litter. My suggestion is to see if he prefers dirt or soil instead. Some ferel cats absolutly will not use litter(maybe it gets stuck in their feet and this is unfamilliar to them and they reject it) I know it sounds messy but it just might be the answer in your case.there is a kinda of new litter out called yesterdays news. It is recycled newspaper and looks just like regular litter ( special process I guess) but it doent smell like litter or get stuck in their feet.Vets recommend it for cats who are recently declawed( never ever do that to him please) or who's feet are sensative to the granular litter.ChiChi and I wish you the the best of luck
