How does one do this switch? With two cats in the house/apartment now I want to do fixed time feedings so I can assure my older boy isn't stealing from my kitten... and for some other reasons.

To be honest, make sure you draw their attention to the food when you put it down. Leave it there for a longish time, and supervise what they do -- make sure they're only eating their own food. Shorten the times the dishes are down. Eventually, they will learn to eat when it's there, or they'll be hungry until they see the dishes again. My girlfriend's 4 cats have mealtimes, and are so used to it now that when they hear "Places!" they stand in a row and wait to be fed. It'll take a few days, but they'll adjust!

to prevent this from happening you can either watch them eat or you can put their food bowls in very very different places so if one goes for the others food you can see that in plain view!

I've been doing that.. in different plces, but they each want the other's food.

Ive been mixing wet with dry, if they don't finish it, can I put it in the fridge until the evening (let's say I tried in the morning)?
