Sometimes, when I've got lollipop in my lap, and I'm stroking her, she'll love it! Then all of a sudden, Im not even doing anything different, she'll bite me or scratch me
(never drawn blood though)!

What causes this and how can I stop it?

Probably getting overstimulated from the petting and giving you a warning bite. Watch for signs of overstimulation: skin on the back twitching, tail switching, eyes getting a "wild and crazy" look. Stop petting as soon as you notice any of those signs.

Stop petting altogether unless you do it lightly and less than a minute. Petting is not something all cats enjoy. It is an emotion WE look for mostly, and they have adapted over time. But some cats would rather not be bothered and your cat sounds like one of those.
