Come on - I know you've all got something that you made up that you are SO proud of!! Let's share our original recipes...as long as we're not giving away any closely kept secrets...


Here is one that I am especially pleased with...

Mushroom Wraps

Ingredients:
300g mushrooms, sliced
Couple of big tablespoons of whole egg mayonnaise
Handful of pine nuts
Cajun seasoning
Two sheets of rice bread (you know - thin and square, like lavash bread).

Method:
Fry the mushrooms in butter until starting to go soft. Add the pine nuts and cook until toasted. Shake in cajun seasoning to taste. Take off heat and stir through whole egg mayonnaise. Spoon into the middle of the bread wraps and fold into packages. Place packages back in pan and sear until sealed.


And voila!! Quick, easy, AMAZINGLY delicious and healthy and a great fast snack!

My most requested dish is "Tallerine"

1 lb ground beef
1 block of velveeta
1 can of mexican corn
1 can of mexican rotel/diced tomatoes
1 can of cream of mushroom
1 bag of egg noodles
1 SMALL can of tomato sauce

Boil noodles, brown meat....preheat oven to 350...combine all ingredients (except cheese) in a large casserole dish..mix well...then layer the top with slices of velveeta-- thickness depends on how much cheese you like...cover with foil and cook for 15 minutes, remove foil and cook for another 10-15 minutes...set for 5 minutes and stir and serve...GREAT dish-- cooks alot!!!!!!

An easy appetizer:

1 baguette- preferrably day old bread.

slice on diagonal about 3/8" thick.
Brush w/ olive oil and season with coarse salt and any other seasoning you like (I try to use one that contains parsley. Sprinkle w/ grated parmesan cheese.
Place in pre-heated 400 degree oven for about 10 minutes or until cheese is lightly browned. These will store nicely too if you have any left!!

We have our own recipe for Enchalada Pie!

Ingredients:
Corn tortillas
Hot Enchalada sauce
About 1/2 LBS of Ground beef-browned and drained
Lots of shreded cheese

Mix cooked ground beef and hot enchalada sauce in a medium saucepan and let simmer until hot.
In a 9 X 13 baking pan that is about 1 1/2 inch thick, cover the bottom with tortillas. Cover with beef mixture. Cover with cheese. Repeat the process until all sauce mixture is gone. Try to get at least three layers. Bake at 350 degrees until cheese is melted. It is best if you can let it sit for a few hours in the refrigerator before baking, if you can.

Serves 8-10 people.

I know a lot of other people say they make it different. If this is the most common way, sorry.... lol, I just don't know it!

I have multiples, but I'll share this one 'cause it's fast, easy, and yummy. I love it because you can make it with cocoa, and the equipment--and thus cleanup--required is minimal (1/2 cup measuring cup, 1/2 tsp measuring spoon, tablespoon, small bowl, medium bowl, 9x13 pan, sifter, wax paper). Plus you can add anything to it ... raspberry chips, mint chips, whatever. TIP: To measure the shortening without a mess, line the 1/2 c. measuring cup with plastic wrap, smoosh the shortening in, lift out the wrap, and do it again. Voila! No greasy measuring cup to clean. Also, these brownies don't taste like coffee, even though they have Kahlua in them.

Ev's Famous Brownies
1 c. shortening
14 Tbsp. cocoa

1 1/2 c. flour
1 tsp. salt
1 tsp. baking powder

4 large eggs
2 c. granulated sugar
1 tsp. vanilla
1 slosh (about 1/4 c.) of coffee liqueur (Kamora, Kahlua, etc.)

In the small bowl, melt the shortening and cocoa in the microwave. In the meantime, sift the flour, salt and baking powder onto wax paper; set aside. Lightly beat the eggs, then mix in sugar, vanilla, and coffee liqueur. Stir the chocolate mixture into the egg mixture. Stir in dry ingredients. Bake in a greased 9x13 pan at 350° F for 30 minutes. Place on a cool surface (anywhere but the warm stovetop) so that they don't continue to cook.

I would say cut into squares when cool, but really, what would be the point of that? You have to at least have one right away.

1 cup condensed sweetened milk
1 cup Lemon Juice
Graham crackers

Mix the whipping cream, condensed milk, and juice in a bowl, to taste and to batch size.

place a layer of graham crackers on the bottom of your chosen pan. spread the mixed cream, milk and juice over the top, add a layer of graham cracker crumbles to the top. If you choose you can make this a layer bar as well, by placeing another layer of graham crackers over the mix, and than another layer of mix.

Place in fridge to chill

Is this supposed to be whipped up or just mixed?

Po' Man's Waffles

Need:

Toast
Butter
Maple Syrup
Knife (or fingers)
Toaster (or microwave, oven, burner, whatever you can get your hands on)

Step one: Toast the bred
Step Two: Butter it
Step three: Squeese a line of maple syrup from one corner to the other, use knife/fingers to spread it into the butter.

Enjoy



Cheap, quick, and easy Dutch apple pie

Need:
Gragham Crackers
Butter
Water
Apple pie filling (preferably the stuff with lots of goo)
Flour
Brown Sugar

Step one: Take the gragham crackers, put em in a plastic bag, use a rolling pin to squash the hell out of em'. (Oh.. um.. probably need like... two packages of gragham crackers)

Throw eh.... a stick of butter (for a regular sized pie) in a bowl and melt it, add crackers to it. Mix it aroudn till its all mixed.

Squish the crumbs and butter into the bottom adn sides of the pan, should be like 1/4 an inch thick.

Take out a can opener. Open can. Unceremoniously dump gloppy pie mix into pie. Spread it out with fingers (ok or a spatula/spoon)

Use the same bowl you made the crust in, dump in another stick of butter.... 1 1/2 cups of flour, and 2/3 cup of brown sugar in. Mix until its crumbly (the amounts might not be right, going from memory)

Sprinkle on top of pie.

Put it in the microwave for about two three minutes, until the topping is melted.

Probably shouldnt eat it right away. But if you want to ok. Otherwise put it in the fridge so the crust can get hard, cut it and serve it individually. If they want it warm, point em towards the microwave. Otherwise give them a plastic fork to go with thier paper plate, and plop a scoop of vanilla ice cream next to it.

Taco Salad Dip

1 lb ground beef
1 medium onion, diced
Seasonings to taste:
Garlic powder
Salt and pepper
Chili powder
1/2 cup of your favorite salsa (I use Pace Picante, medium)
1/2 green pepper, chopped
1 small can tomato sauce
1 can hot Jalepeno Bean dip
small container sour cream
chopped lettuce
1 cup (or more) grated cheddar cheese

In 2 quart sauce pan, brown ground beef and drain all the fat. Add onions, salsa and seasonings, stir well, cover and simmer for about 5 minutes. Add tomato sauce, bean dip and green peppers and stir completely. Pour into a microwave casserole. Cover and microwave on high for 3 minutes. Stir. Cover and microwave another 3 minutes.

Let stand for a few minutes then spread sour cream evenly over the top. Cover with chopped lettuce (about 1/2" layer), then the cheddar cheese.

Serve with tortilla chips. Scoop type chips seem to work the best.

Just mix it all together so its good and blended...I use the kraft heavy whipping cream..

It can take a little bit to get the lemon juice blended..but thats all just blend together
