Well, it's my lunchtime and I'm starving. I have leftovers from last night: Veggie hot dogs sauteed with red pepper, onions and grape tomatoes and potato-squash pancakes. Hopefully I have some sour cream left in the work fridge. What are y'all eating?

OH, yummmm! I was naughty, and have just finished bacon (3 pieces) and a 2-egg omelet with fresh celery, crushed red chilies & lots of garlic
Some sour cream would've gone great. Oh, yeah, and I had a big glass of ice-cold Lactaid milk with Nestle's Quik chocolate mix!!!
Thought I was full, but your dinner menu sounds sooo good!
I think that I'd like to try the veggie-hot dog sautee! I've never heard of potato-squash pancakes - can you tell me how to make them? Are they like blini (Lithuanian potato pancakes that you grate potatoes very fine, and mix with finely chopped onion, egg, flour & s/p) and fry, or like the kind of potato pancakes that you mix mashed potatoes with flour, egg, milk & a little baking soda and cook on a griddle? I love food - I worked in restaurants for year, and good food is such a joy in life!!

Just had a salad for lunch - lettuce, eggs, pastrami, onion, crushed tortilla chips, feta and cheddar with ranch. Yum!

Mmmmmmmmmmmm. Chocolate milk!
The potato-squash pancakes are better fresh than the next day. They are the shredded kind. Here's the recipe, but I don't measure, so it's approximate. I got the recipe a long time ago from an actual cookbook, but don't remember it exactly. This is how I make them. When I shred I use the side with the largest holes.
1 baking potato, shredded
1 sm-med yellow summer squash, shredded
4 T. Wondra flour
2 large eggs
2 T. fresh chopped parsley
onion powder, S& P to taste
oil for frying

Heat oil. Mix other ingredients. Spoon with tablespoon into hot oil and press to flatten. Cook until golden brown. Serve hot, with sour cream. Makes about 10 patties.

I think all salads should be made with cheese!

I didn't really have much of a lunch. I'm still feeling a little under the weather, though 8million times better than I felt a couple of days ago, so I just had a plum for lunch.
Dinner though is going to be a big fat burrito from Moe's!

I'm having a small steak (4 oz orso) Some peas and a rotini pasta salad. b v nbgnm,hjkl thank you Lukey. The steak is so tough tho I think someone snuck an old water buffalo in on me. A very old very mean, very tough ole water buffalo.
