So... what is your favorite cheese and how do you like your cheese? I like all kinds. Here's some that I can remember:

mozerella
colby
monterey jack
chedda'!!!
havarti
farmer's cheese
camembert
brie
parmesan
blue cheese
other cheeses I can't remember.com

I forgot jalapeno cheese. It's probably very different everywhere you go, but the kind I tried had bits of jalapeno in it. I thought I knew what to expect since I like spicy things, but it was way better than I imagined.

Have either of you two had cheese at room temperature? I never realized how good it is like that until I was well into my twenties. The texture is nicer and the flavor doubles. I felt cheated for not knowing that most of my life.

I make a wonderful blu cheese dressing- given to me by a Swedish chef and the recipe is a huge secret and a huge success every time I make it.

I mean not left out for long enough to dry out because that would have to be a few hours. 15 minutes can do it. It really depends on how warm it is in the house. The cow cheese looks really cute!

I don't think I've had either, but I'd love to try them!

Ryan, I don't really like cheese. Room temperature cheese sounds gross.

Cheese really does need to be at room temperature to "wake up" and offer all its lovely flavour/aroma. I love pretty much all cheese except the glorified wax and the dayglo orange stuff that calls itself cheese.

In my fridge pretty much all the time...

5 year old white cheddar (Balderson)
Oka
Cambozola
Jarlsberg
Parmegiano Reggiano

For treats/variety from time to time...

Stilton
Roquefort
Camembert
Brie
Havarti
Limburger
anything else that looks interesting

Also, for particular purposes from time to time...

Feta
Goat Cheese
Danish blue
what have I forgotten...?

No, I really don't like cheese much, Ryan

That's what I had before I made the thread. I cut some slices of havarti, farmer's cheese and some light cheddar. I spread them out on a plate and put it on top of the monitor for about 10 to 15 minutes.
My little block of jalapeno cheese was gone a few days ago though.
