I was thinking two big towers of food, and two big towers of water, and an extra litter box with deep litter in it.. Then having someone stop in mid week just to make sure everyone's doing ok.. Does that sound ok?

I hope they don't get mad at me for leaving for a week!

I just moved there, and it's about a 40 minute drive from anyone that I would trust with a house key. That's why I can't really get anyone there every day.

Lots of durable toys for them to play with? When I left Guin for a week, I left my scarf in his bed as well so that he could still smell me!

You've got the two? I'd leave a couple more extra litter boxes also. Also if any way possible, see if you can't get your friend to come out twice during the week. When we had Melichus I would leave him at home for 2 nights/3 days, any longer than that and I boarded him (dog was always boarded, of course.) Like you, I didn't/don't have anyone to come in and do "cat stuff." The kittens won't be left alone until they're at least a year, and maybe not then if I don't feel I can trust them.

If you've found a vet in the area, I would check to see if their vet techs do any sort of petsitting, and if so, hire someone to come out each day to check on the kids.
