I knew I should've planted a garden this year! I miss my dad's cucumbers, when they grew they really grew ...by the dozens. We ate cucumber salad for weeks afterward.

Fwan, pickles are just cucumbers that have been, well, pickled!

I actually planted some tomatoes this year; I usually only plant flowers and things, it's been years since I planted any veggies. They're getting ripe and I've picked a couple. Sunny wants to have a "real" garden, the only problem is I know who will be doing most of the work in a "real" garden
!

Here goes:

CUCUMBER SALAD
-White vinegar 1/2 cup
-Water 1/2 cup
-Sugar 1/2 cup
-Kosher salt 1/2 teaspoon
-Garlic, chopped fine 1/2 teaspoon
-Shallots, sliced fine 2
-Red pepper flakes 1/8 teaspoon
-Cilantro, chopped fine 2 tablespoons
-Cucumbers, peeled, seeded and
sliced fine 3

prepare cucumber salad by combining the vinegar, water, sugar, salt, garlic, shallots, red pepper flakes and cilantro and pour over the cucumbers. Then allow salad to chill.

I've used red onion sometimes instead of shallots. I also use more cilantro and garlic than it calls for. Do not have a heavy hand with the red pepper. A little goes a LONG way! I like this recipe becasue it is so easy on a hot summer day!

Okay, slightly off-topic here, but what is it with Cilantro
? A few years ago you never saw it, and now it's everywhere! Neither I nor my husband like the taste and it's getting to be almost impossible to find a salsa that doesn't have it.

I love cilantro! There are a few salsas up here that don't have it. There is also a salsa mix that you add to tomatoes and onion that would work for you. I will check to find out the brand name of it.

Thanks Karen, that'd be great! Although I only planted 4 tomato plants, we're still going to have more than we can eat on our own and making the extras into salsa would do nicely!
