How much should I feed him?

He's a fairly large cat. Not fat, but just a big kittie. Probably 15lbs or so. Anyway, I have been just leaving a bowl of food down for him, filling the dish when I notice it getting low, and he just grazes here and there throughout the day and night. Should I be designating meal times for him and bringing up his dish of food and water? Is it healthier for him that way?

Also, I only really give him dry food. My mother gave her cat wet food mostly and in his later years his teeth started falling out. I'm assuming that was because the soft food allowed his teeth to get weak, so I don't give my cat soft food. Well ... I take that back. I gave him some once, and he loved it. Maybe it could be like a treat or something that he gets once a month. I dunno.

But if someone could point me to a good guide on feeding practices for cats, that would be great. I'm not really looking for personal experiences with your own cats, I'm looking for solid general tips based on studies and facts.

First read the back of kitties food bag and look at the wt and see what it says... you should think about some wet food it is closer to a cats natural diet and may help with later issues since kitties dont drink enough water...

How old is kitty?? what are you feeding for food ??

No, sorry, that's not the way it works. Sounds like an "old wives tale" that teeth need to be "excercised". Cats' teeth go bad because they are not kept clean. Just like human teeth.
