If you want to try it, do everything else first and keep it warm. Then heat the grill on high, and turn down to medium. Brush one side of your prepared liver with bacon fat or melted butter and place it on the grills. When it's all placed, brush the other side, then immediately go back and turn it all over. By the time you've done that, it's time to take it off, and you'll have tender, sweet, butter soft liver. Oh, my, am I salivating now!!!
BTW -- you WILL get some flareups, so have a spray bottle handy!
