pesto recipe

has anyone got a tried and tested recipe for home-made pesto?

seen loads of recipes but not sure which one to try

that looks really good. is it easy to make or am i likely to mess it up?

This one works very well...

Pesto

2 c firmly packed fresh basil leaves
¾ c \tgrated parmesan cheese
¾ c \tolive oil
3 \tgarlic cloves
¼ c \tpine nuts

Place all ingredients in blender or food processor. Cover and blend on medium speed about 3 minutes, stopping occasionally to scrape sides, until smooth.

Toss with hot cooked pasta, serve as a garnish on steak, or...

Enjoy!

No, people scare from pesto and it's really quite easy. And don't be afraid to put more garlic in for instance if you like more garlic.

i'm cooking a meal. this is what i'm thinking so far:

Mixed roasted nuts with chili, rosemary and sea salt to pick at between courses

mussels in tomato and chili (ready prepared. shhhh!) with a selection of bread (might make bread. not sure yet)

chicken wrapped in bacon with baked beefsteak tomatoes topped with goats cheese and pesto (had them at a restaurant and they were really yummy)

rocket salad

cheesecake

coffee.

anyone got any ideas/suggestions?

I've got a lot on my mind with exams coming up so this is like a 'last supper' before we all have to settle down and revise. plus cooking makes me less stressed!
