It's great raw with a nice spinach dip. I also make a fabulous (or so I'm told) Broccoli and Cauliflower casserole with cheese and eggs and mayonnaise and mushroom soup. I'm told by my husband's family that if I don't bring that casserole to just stay home! LOL

I also love it with a nice cheese or three cheese sauce.

Another tasty treatment of cauliflower is with curry. Mix some curry powder with soft butter and spread it over a whole head of cauliflower after it has been steamed/boiled/microwaved -- however you want to cook it.

Or microwave the florets with no water, just sprinkle lightly with curry powder and dot with butter. Very tasty.

Another microwave treatment, substitute paprika and dill for the curry powder, and sprinkle with grated parmesan just before serving.

Raw is still my favourite, though, as long as there's a nice dip -- something cheezy, or garlicky, or with dill or curry.

I think it's safe to say that pretty much whatever you can do with broccoli, you can do with cauliflower.

Cauliflower and cheese is one of the great combinations, cooked or raw (try a blue cheese dressing with it). My recipe for cauliflower soup is always praised - cook it gently in stock with a cut up potato, do not overcook the cauliflower or it has a horrible 'school dinner' taste, add a sweated sliced onion, salt pepper and some nutmeg (add slowly and taste it!), liquidise the lot and stir in some chopped parsley and sour cream.

I like to combine cauliflower with broccoli and carrots. Here in the states you can buy that mixture frozen. Even better it to pour a cheese sauce over it!!

I like cauliflower cheese, but I'd add some cayenne pepper to add a bit of 'bite'.

In our house this is a popular vegetable, as we like the white floret parts, and the guinea pigs like the green leaves it comes wrapped in! So nothing gets wasted...
