Yes I do, we eat a lot of it. I do eat it raw - with a nice dip say a spinach/scallions/sour cream and seasonings dip, or I make a mock potato salad - cut off all stem, use just the florets, broken into smallish pieces, mix as you would for a potato salad with mayo, celery if you wish, bits of cooked bacon, nice fresh ground black peppercorns, mayo..yum!

I also make mock mashed potatoes with this - boil (no stems),drain, mash and add sour cream and/or shredded cheddar cheese.

I have also seen delicious recipes for a cauliflower soup, and you can always make cauliflower au gratin

echoing Pat, you can eat it raw, but you really need some sort of flavorful dip--ranch or hummus maybe. You can also roast it in the oven with other veggies. I fill cookie sheets with broccoli, onion, cauliflower, zucchini, squash, etc, drizzle with olive oil, then sprinkle some thyme and oregano. I heat the over to about 450 F and put the veggies in for about 30 minutes, turning them after about 15 minutes. Pretty yummy.

Hey Pat! I've eaten them as mock creamed potatoes for awhile now, but I love the sound of the mock potato salad too!

Another possibility is creamed cauliflower - I make a white sauce out of butter, flour, milk, salt and pepper, and put it over boiled (and drained )cauliflower. You can also pickle it.
