Two of my cats are digging in my indoor planters
. They seem to do it right after I transplant a plant. They throw the soil all over the floor and generally make a mess. What can I do to deter them from doing this?

have you tried putting orange peel on the dirt? if not how about some small aquarium stones around the plant base over the dirt so the water can seep through but the cats cant get tempted to dig?

I put some River Rock that I had bought at Wal-Mart in my planter around the plant and no one has touched it since. The rocks are also large enough that when I need to pull them out it's not hard to do.

Jazzie is a total HORROR for doing this, I have every sympathy about earth all over the floor.... balls of cotton wool with drops of citrus essential oil on left on the top of the earth have been enough to deter the boys. Jazzie does not care. I've tried putting short twigs in amongst the plant sticking straight up and that puts her off getting into the pot. However she then pulls the twigs out and takes them away to play with them. It's marginally less messy

Lots of cats do it - it is another litter box to them and you can't blame htem for it. I either put rocks in to cover all the earth or use duct tape to fasten plastic covers over the earth, leaving a small opening to water the plants through. I do find the plants need water less often this way! I have also seen readymade plastic covers that fit around the plants, available in diferent sizes.colours.
