"New Posts" Time Limit

I usually read the forms by using the "New Posts" icon at the top of the screen, but if my attention gets divered while reading for so 15-20 minutes, I come back and the system has marked them all as read if I go to the next new page of posts.

Anyway around this settings wise in my profile?

No. That 15 minute time limit is set for the entire forum.
