good stuffed mushroom recipe? I've been all over the net to all of the popular recipe sights and nothing really appeals to me. I'm looking for an appetizer to serve at a shower. Something that could be prepared easily and quickly or maybe even if the suffing could be prepared the night before. Then the day of the shower I could stuff them and bake them.
I've been through every mushroom recipe at recipezaar.com and a few other sights.

Please let me kow if you have any recipes and/or if you've tried it before. (If you don't mind sharing.) That's a big plus to me, I don't want to make something unless I know it taste good!

These are really tasty! I got the recipe from The Food Network.

Stuffed Mushrooms

12 fresh white button mushrooms, brushed clean
1 tablespoon olive oil
3 tablespoons minced shallots (about 2 large shallots)
2 cloves garlic, minced
3 tablespoons finely chopped fresh cilantro leaves
1 lemon, juiced
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 ounces smoked mozzarella, cut into 12 (1/2-inch) cubes
1 spray olive oil cooking spray
3 tablespoons finely chopped fresh parsley leaves

Preheat oven to 350 degrees F.

Remove stems from button mushrooms and set aside mushroom caps. Finely chop the stems. In a nonstick 10-inch saute pan, heat the olive oil over medium-high heat. Add the shallots and saute until translucent, about 1 1/2 minutes. Add the garlic and mushroom stems to the shallots and continue to saute until soft, about 2 minutes. Remove from heat and fold in cilantro and lemon juice. Season with salt and pepper, to taste.

Place mushroom caps on a nonstick baking sheet with the hollow sides facing up. Place 1 mozzarella cube in each cap and cover with 1/2 teaspoon of the shallot mixture. Lightly spray the caps once with olive oil cooking spray. Bake for 10 minutes or until cheese is melted and mushrooms are golden brown. Remove from oven, sprinkle with chopped parsley and serve warm.

*You can substitute any cheese for the smoked mozzarella.

I made up a crabmeat salad - crabmeat, cream cheese, diced scallions, fresh ground mixed pepperberries, stuffed this into mushroom caps and broiled until the mushrooms were done.

Very yummy (imo
)

All of that sounds good......I' don't have a recipe to any of the ones that I've eaten. I'm going to whip up a batch of both of your recipes, hopefully this week!


Sam, I found some bacon stuffed recipes on the net.......I was just a little nervous about it b/c it had cream cheese in it. Wasn't too sure of it but if you say it's good, I might whip up a batch of those too.

My mom has a recipe for stuffed mushrooms with crab meat, shrimp and scollops. I think they're discusting (hate scollops) but everyone loves them! If you want it, let me know and I'll give her a call.
