Is this something to wait out at home or should I take my cat to the vet?

My Mynx is almost 6 years old. She has had a mushy stool, not full on diahrrea but definitely mushy, for about a day and a half now; the stool is slightly less brown in color and a bit toward the yellow/green side. She also has watery eyes and has sneezed a few times. She doesn't feel like she has a fever and she hasn't thrown up any. She's always lazy, but not more lazy than usual. I can't tell if she's eating less because we have two cats and she refuses to eat in front of people. These symptoms seem pretty similar to a kitty cold or flu. Is it likely a kitty cold or is it more likely an infection that will need a vet visit and antibiotics? Should I take her straight to the vet when it opens Monday morning or should I wait a day or two and see if the diarrhea/watery eyes clears up on its own?

Is she a strictly indoor cat or does she go outside?

Feed your cats in different rooms to see if she's eating. Check her gums and see if she's dehydrated, you do this by touch, if it's dry of tacky she is. You can also pinch the area around the shoulders to see if the skin springs back quickly or not. 

If she isn't eating you could try baby food (people swear by Gerbers chicken or turkey without any additives like onion or garlic). I boil chicken and a little bit of rice. Or human grade sardines in tomato sauce or spring water will work with a cat who has a runny nose (with little sense of smell).  

If she's eating and not dehydrated I would keep watching her to see if it clears up on it's own. Otherwise, I would take her to the vet.

Both cats are indoor only cats. She does not appear dehydrated. I will put her in a separate room and give separate food/water bowls for each cat to see if she's eating. I just noticed recently though that the other (male) cat has started coughing occasionally. So the female cat is sneezing, has mushy poop, and has had watery eyes all for at least a day and a half and now the other cat has started coughing but he has no other symptoms. He is eating fine, playing fine, pooping fine, but does have a very occasional cough, so occasional it could be coincidence or me being over-observant in looking for symptoms. He appears completely fine other than that so I'm not really worried about him being sick yet, whereas she clearly has multiple symptoms.

That's great, just watch her, if she's not dehydrated and she's eating a little wet food then it's not urgent. Put a bit of extra water in her wet food if she will eat it like that.
