Mostly regular poop, but with mucus?

A few months ago, my cat was treated for giardia, which was also giving him diarrhea. They had given him medication to help with diarrhea previously, but I believe NOT with giardia. They put him on something for giardia, as well as the same medication to balance out the flora in his tummy, and things were pretty okay. He had normal poops for a few weeks, but then sometimes they would come out like the ideal tootsie roll, but with a bit of mucus near them, just on the edges or ends. The past couple days, I've noticed there's still mucus coming out, sometimes more consistently (as in, on more "turds") than others. The poops have no blood and are a normal color and consistency (though sometimes a bit softer, I think). The mucus itself is almost the same color as his litter, but sort of a light tan color -- almost like he could just happen to be peeing right on top of where he's buried his poop and the litter is mixing with it weird.

Does this sound like the course of medications they gave him for giardia didn't totally kick it? Any recommendations?

I would say if there is a change in the amount of mucus, then it's time for another Vet visit as it is possible that he still has giardia, or something else.  This can be indicative of several things, parasites being just one.  Stress can even cause it, so can indiscriminate eating
