good afternoon!

lately i've been thinking an awful lot about fresh vegetables. this time of year up north, we don't have the fresh grown veggies available to us that we do in the warmer months. of course, those of us who live in warmer climates might very well have more fresh veggies available to them......pretty much year round!

for today's Question of the Day, let's talk about the veggies we like......and those that we really don't care for.

What vegetables do you like or love?

and -- What veggies do you really not care for?

i'll start!

i think my favorite vegetable is the tomato. oh, what i would give for a nice fresh homegrown tomato right about now! i'd make a BLT, or a simple tomato and lettuce sandwich with a little mayo on it. i actually like pretty much all veggies. i'm not so big on rutabaga, but that's likely because i haven't found a way to prepare them that i like. i also love carrots -- raw, cooked, or in recipes. cabbage and brussel sprouts are others that i really like. and squash -- pretty much any kind of squash! oh, and beets!!! i just adore beets.

i like spinach, but not cooked into mush. i prefer it fresh and added to salads, or on a pizza margherita!

okay, now it's your turn!

I think my favorites are carrots and radishes.  Don't hear much about radishes probably because there isn't much that can be done with them but I love them in salads.  I also like spinach used as a salad green, don't care for it cooked.

I think my least favorite is turnips,  I don't care for iceberg lettuce.  There isn't anything to not like but it just doesn't offer much in either taste or nutrition.

I used to not like many vegetables growing up,but now I really enjoy them.  I do miss fresh from the garden veggies from our garden during the summer months.  Winter is hard.

Some of my favorites are: carrots, parsnips( love love love these roasted!), broccoli, cauliflower, asparagus, lettuce, spinach, cucumber, zucchini, radish, peppers, corn, green beans

What I don't like: lima beans( I cannot stand the texture) and tomatoes ( although technically a fruit I think).  I love things made with tomatoes, but cannot stand the mushy texture of a tomato.

There are some I can take or leave: cabbage, brussel sprouts, celery

I like a lot of veggies: tomatoes, cucumbers, summer squash, asparagus, spinach, artichokes, and parsnips.

The ones I hate are the ones my mother always fixed:

Rutabagas

Turnips

Mustard greens - Mom and Dad always poured vinegar steeped in hot peppers over all their cooked greens

Turnip greens

Kale

Cooked cauliflower

Okra - too slimy

And one my husband loved and I just got too much of: brussel sprouts

I like most veggies although I didn't as a kid. But as I've learned it was because my mom had no idea how to cook them other than boil them to death.  Like, I hated peas as a kid because they were always out of a can or frozen. But now, if they are freshly picked? Do enjoy them a lot, especially when buttered with mint.

Favs - broccoli, asparagus, tomatoes (put I'm picky about those being from NJ where we grown fantastic ones), green beans, fresh NJ corn (as good as our tomatoes!).

I do have some honest dislikes; kale is the biggest. I do not get why this has become so popular. Other greens that taste better are far more nutritious - like arugula (YUM).

Not a fan of turnips either but mostly because they give me horrid gas.  I once had a delicious French potato turnip soup but oh so unhappy afterwards

Favorites: Carrots, Celery (especially if you put peanut butter or cream cheese on it!), Green Beans they have to be fresh and they are amazing with bacon, tomatoes, zucchini, cucumbers,

arichokes, corn on the cob.

Least Favorite: Brussel Sprouts and Asparagus. I've tried to like both because my mom likes them but they're just not for me. And cauliflower I have never liked it.

Pretty much anything can be good or bad depending on how it's prepared. So I can't really say what I like/dislike because it really depends on a lot of factors.

I really love a good fresh tomato, though (also, technically fruit! :lol3:). And sweet potatoes, yum.

I have to admit..never had rutabagas or fennel or parsnips.

Like= corn, broccoli steamed, cauliflower-cooked mashed with butter..yum. tomatoes cooked. onions...fried! jalapeño peppers that are breaded and deep fried with cheese inside...peppers of most varieties..raw or cooked.

carrots cooked in a pot roast drippings..don't care for them raw..celery..in anything! cukes only if very fresh..they get slimy fast. lima beans only in a can of stewed tomatoes with corn..it's a soup that my dad came up with...it reminds me of my parents when I make it...we lived on stewed tomatoes many nights..just yummy.

tomatoes in a BLT with deep greenery lettuce..sounds lovely!

Cabbage-only raw-don't like it cooked. blah! potatoes...all varieties..cooked of course. winter squash only if it's loaded with brown sugar and butter..otherwise yuck. I don't have much experience with others other than acorn squash-cut in half and nuke it with butter...eat it right out of the shell..it's actually pretty yummy. Forgot Green beans-I eat them cold right out of the can.. frozen is good..fresh..either way!

Parsnips are good. Kind of like carrots. Very good roasted with garlic. Rutabagas are good roasted too. They have a slight spiciness that can really add to the overall flavor. I don't think I've ever had fennel root. I don't really like fennel seed though, not sure if they taste similar.

Fennel tastes like licorice, which is odd in a vegetable. Parsnips are softer than carrots and have a slight parsley flavor. They are a delicious addition to stew.

I'm not familiar with wild parsnips, but Queen Anne's Lace is a wild carrot. It probably escaped from colonial gardens. I've never eaten it, but I would think it's edible.

This is an easy question for me since I'm vegetarian.  I don't think there is a vegetable I don't like.
Lately I have been eating more of the root vegetables especially in soup with quinoa.

My go to list of favorite veggies are:  garnet yams, broccoli, brussel sprouts, cauliflower, butternut or kabocha squash, cremini, portobello or shiitake mushrooms, onions, asparagus, kale, spinach, arugula and red, green, yellow or orange peppers.

I pretty much like most vegetables. Those included are: tomatoes, kale zuccini, cucumbers and corn on the cob. I could eat my weight in kale 3 times a day.

Ones I don't like: arugula, spinach and mustard greens.

I like all vegetables except eggplant.  Yuck.  Slimy stuff.    Brussel sprouts are not a huge favorite either but I can force them down with the right sauce.

Tomatoes, lettuce, broccoli,  corn, beans, peas, onions, peppers - mmmmmm.    Yummy.

ahhh, radishes!!!
i love them too, and their peppery taste!

yup, turnips are kinda close to rutabaga -- not among my favorites. i grew up eating iceberg lettuce, so i'm used to it.
i agree that it doesn't have much taste or nutrition to it, which is why i like to add other greens with it in salads -- especially fresh spinach. i'll also add thinly sliced cabbage (red or green) to salads that have iceberg lettuce in it.
