What breed do you think my cat is?

She is approximately 8. I found her in the street, sick and practically begging to be saved. She had such severe stomatitis that she was unable to eat or groom. She was only 4 lbs when I found her, but after extracting almost all of her teeth, she is happy and healthy. She is long haired, kind of a cream and grey coat, with a distinctly short, fluffy tail that has a little deformity on the end (not sure if she was born with this or in an accident). She has what I call "snow mittens", these long tufts of fur on the bottom of all paws. She loves all people and is not shy at all. The most relaxed, trusting, and loving cat that I've EVER met. She has come with me on trips and doesn't hesitate to treat any place like home.

Probably a longhaired domestic, DLH.  Ie no especial breed -  as the great majority of cats are.

The coloring and pattern is diluted tortie + also a tabby I think, so diluted torbie.

I see by saving her, you not only increased your own Karma tenfold, but also, took a high win on the lottery of Life, both yours and hers.    :)
