@Mamanyt1953, c'mon up! I have hot dogs, onions, and cheese. I also have tuna. And ciabatta rolls that are so good toasted. Bring Hekitty along and she can share the tuna soup with my gang.

You know, tuna salad sounds pretty good for me, too. Chances are Rick won't be home for supper today, so I could do that for myself. It works. I just love tuna salad.

The other day, I made a quick tuna sandwich.. I say quick because, I had to mix and eat it so fast.. I did not want to share it with Artie.. no for selfish reasons, but because I did not want to mess up his food with his tummy..not right now.. 

Artie was all over me... I could not eat in peace. He put his face in my sandwich, his paw in my face.. he was climbing all over me...I could not enjoy the sandwich at all... and I had not had tuna for a long time!! 

I think I am going to take a couple slices of pizza out of the freezer, and re-heat for supper..

was going to have a salad, but I think I had too much fiber (popcorn) yesterday...sigh

Home made sauce is so much better than that stuff you buy in a jar. I used to grow my own tomatoes and I made the best pasta sauce from them.

Tonight I had broccoli, cottage cheese and a sour pickle.

You tickle me. You sure love those mini pretzels don't you? I can't eat pretzels. The salt on them make me sick to my stomach.

   they're inexpensive, and a nice side to my meals that will fill me up well. they're also better as a snack than potato chips and similar, imo. 


tonight i'll heat up (more) pasta (cooked some more this morning) with spaghetti sauce. i'll have some mini pretzels and a peanut butter brownie, to complete my meal.

My b/l eats them all the time because they are low in calories and fat. I like the soft ones when I can find them without salt. I like to dip them in ranch dressing.

Tonight I'm having Pacific potato soup from a carton and a bagel with cream cheese. I think their soup is so much better than the canned soup.

Back in January, I had made a standing rib roast and we stuck the leftover roast in the freezer. Well, I took it out yesterday and stuck it in the fridge to thaw. I'm making pot pie with the beef. This is the pot pie where you make a dough, roll it out and then cut it into squares. Drop the squares into the simmering broth with the beef and a few potatoes. The noodles will puff up a bit. And the whole thing is simply delicious. I think it's probably an old PA Dutch thing. Very plain, very simple, very good. A bit of wilted lettuce to go with it (whenever I make something like this, I want a bit of tartness as well, hence the lettuce.)

And I'm making a pan of double chocolate brownies for dessert.

What is wilted lettuce @Winchester?
Wilted lettuce is chopped lettuce with a few chopped green onions with a vinegar-y type dressing, My mother used to make it often and I enjoy it. A lot of people will make the dressing with lemon juice, but Mom liked vinegar and sugar. Sometimes she would brown a couple strips of bacon, chop it, and add that to the lettuce, too. You can also use spinach instead or endive. It's called wilted lettuce because the warm dressing would kind of "wilt" the lettuce a bit. It's really good.

Mom used to make a dandelion dish in the spring with very young dandelion and lots of bacon and hard-boiled eggs. Dad would go outside and dig up the dandelion. She would serve it over boiled potatoes. I hated it when I was a kid, but as I got older, I started to really like it.

We don't have it that often at all. Sometimes if my sister and BIL come for dinner, I'll make some, simply because she and I both like it. Rick will eat it, but not a lot. I think it's a very old-fashioned dish....maybe it's PA Dutch. We seem to eat a lot of PA Dutch and PA German foods here. It's the way Rick and I were raised.

Whole wheat spaghetti with some of that sauce I froze.  I switched to whole wheat EVERYTHING when I was diagnosed with diabetes, and am please to report that my blood sugar levels were NORMAL when we checked them last week!  I'm controlled with diet and don't  have to check daily thank goodness.

My mother used to make a spinach salad that sounds similar. My mother-in-law would make dandelion salad a lo but only in the spring. After that they would be too bitter.

Tonight I am having my sister's friend's version of shepherd's pie, not lamb, but beef.

I was craving pizza, so made my own. Veggie pizza with mushrooms, onion and tomato. Used a ready-made store bought crust.

tonight i'll have the last of the pasta with spaghetti sauce and some parmesan cheese sprinkled over it. i'll probably have a handful of mini pretzels, and a peanut butter brownie for dessert.

Rick took the last of the chocolate brownies with him for his breakfast break this morning; he said they were decadent. I made the chocolate brownies, then frosted them with chocolate frosting. I had some leftover cherries in the fridge from when I made cookies a couple weeks ago, so I put the cherries over top. He loves cherries, so it worked out. I think he ate 3/4 of an 8 x 8-inch pan last night. How he doesn't gain weight is beyond me.

Tonight we are having the leftover beef pot pie from last night. That will be fine as we can reheat it in the microwave after coming home from grocery shopping.

We're having our taxes done tonight so it will have to be quick. If the zucchini in the fridge is still good it will be zucchini noodles with sauce and turkey meatballs, otherwise soup from the freezer.

I think just a BIrdsEye steamable protein meal tonight.  Tomorrow is the monthly shopping trip, so the larder is a bit skimpy just now.  There's stuff, but most of what is left requires that I actually DEAL with it!  SIGH...If I were wealthy, I would find a good local caterer and have most of my meals delivered.  Cooking for one has challenges, and without an actual freezer (not just the fridge compartment), it is hard to cook large batches of stuff and freeze it to heat later.
