vegetarian chili with a buttermilk biscuit - so stuffed I had no room for dessertI
I had Amy's vegan chili with beans. You don't get much in those little cans and it was too spicy for my taste. That's why I don't eat desert with a meal. I wait for a couple hours if I want something sweet.

A big, giant whopping sweet potato.  And nothing else.  This sweet potato is the size of both of my fists!
I've done that when Rick was away. Just a big baked yam. Yum. They can get huge!

I'm thinking that tonight we'll have spaghetti. I have a container of pasta sauce in the freezer that I can nuke in the microwave. There are two pumpkin crescent rolls leftover in the freezer, too, that I can thaw. And some salad. That should do it.

(Going to have to do some bread-baking here soon.)

the chili I made was vegan as well but from scratch so I can control the amount of spice, e.g. chili powder - it's a great comfort food in winter!

I am having the last of the pork tenderloin, in a salad.... I cooked the tenderloin on Saturday.. I Think today will be the last of it. I do not like to hold on to leftovers more than 3 days...

forgot to pick up the tomatoes; depending on the weather, I may or may not go out.. it was raining, then huge heavy flakes of snow, now it looks like slush coming down.. ...

Reading all your dinners to try to figure something out..need something wholesome and fast. I have to stop at grocery store=no fresh veggies left other than a pitiful onion and broccoli. Got some farm fresh eggs from a coworker but we are sick of omelets...I have meatballs another coworker made for me but Mr fussy says no he don't want anymore spaghetti...I was thinking of meatloaf and mashed potatoes...I try to make a huge pan to last us at least 4 days...cooking nightly is a headache with a fussy partner..he says he wants salad foods..i want something good and filling..Meatloaf sounds good..now that I have eggs I just need breadcrumbs and tators to make it...and of course a salad...

oh and someone made fresh salsa=gonna take some home and use on top of meatloaf..oh im so hungry!

Got any pasta? Cook a bit of pasta (farfalle or some shells) and drain. Chop the onion and broccoli. Saute the onion in just a wee bit of olive oil. Add the chopped broccoli and saute until just tender-crisp. Throw in the drained pasta. Add some herbs of your choice; basil and oregano would be good. Sprinkle a bit of grated Parm or cheese of your choice. (If you want, you can throw in a couple of the meatballs, too.) That's just an idea in case you don't want to go to the store. It's a quick dinner. (I make meals up all the time, trying to get stuff used up that's in the fridge. Sometimes it works; sometimes? Not so much.)

But meatloaf sounds yummy....I love meatloaf.

Salmon is on our menu tonight. With roasted butternut squash.

you guys are making me hungry!!

Pam, I have not had salmon in a very long time.. keep saying I will pick some up, but I never do..

and meatloaf.. man, it has been years.. but I hate to make a large one for just myself...

into comfort food.. but I am planing on a salad today. I have all the fixings for it.. except tomatoes.. have to get that today.. 

and pick up something for tomorrow and Friday.. they are forecasting 6-12 or 8-14 inches of snow.. a real Nor'Easter.....sigh...

@Artiemom, I dearly love salmon...we don't have it nearly as often as we should. We'll buy it when it's on sale at the grocery store (no fishmongers here, so we get what we can get).

For meatloaf, sometimes I'll make the full recipe, but put it into muffin cups instead of a loaf pan. That way, Rick gets two, I get one, and the rest go into the freezer for another time. I love meatloaf, too; it's a real, true comfort food, IMO. When we were kids, we'd come home from school and Mom was making meatloaf AND mac and cheese; man, we thought we'd died and went to heaven! We couldn't wait for supper and there were always clean plates and empty pans. 
  And I've always loved meatloaf sandwiches!

My comfort meal was my moms meatloaf, mashed potatoes and green beans.. 

My mom made a different type of meatloaf.. It was enough for several people for a couple of days.. 

She made it like a huge meatball, but free form shaped in a roasting pan.. she covered it with stewed tomatoes, some crusted tomatoes, and some tomato paste.. yum was it good.. the best part was the gravy.. 

It was a sweet (from the stewed tomatoes), tomato gravy which you could put over the mashed potatoes and the green beans.. so good.. no extra spices, just salt and pepper..

Alas, it makes a huge amount for one person..

That is a good idea about muffin tins... I am tempted to buy just half to 3/4 of a pound of ground beef, just to make a small meatloaf for me.. not my moms recipe, but mine...just plain meatloaf..

My dad, who was raised on Polish food, loved a variation of meatloaf/hamburger/salisbury steak... it was just ground meat, salt pepper, parsley, onion, Italian bread softened in water, mixed into thick patties.. and fried stove top in a bit of Mazola Corn Oil.. when cooked, they went in a metal bowl and into a warm oven, until time to eat.. 

DELISH!

I may make that for myself...

Hummus with pine nuts (bought from walmart deli they have the best!) with townhouse pita sea salt flavored crackers.

When Mom made meatloaf, she'd make two at a time. There were five of us, plus Dad and I would eat meatloaf sandwiches the next day. She free-formed hers, too, in an oval shape, but she cooked hers in an electric skillet (I have the skillet now). I have her recipe; she swore that you could only use white bread....it had to be white bread. Lots of onion and celery, eggs, milk, etc. She didn't do the tomato thing; she always cooked hers plain because that was how Dad wanted it. Then he'd put ketchup on it. 

Your gravy sounds decadent!

Sometimes I'll make French Onion Salisbury Steaks. The patties are kind of like a meatloaf, I guess. But then, after they're cooked, you put them on a slice of toasted sourdough bread or thick-sliced bread of your choice. And top with lots and lots of caramelized onions with red wine, beef stock and tomato paste. Then garnish with a sprinkle of Parm. They are so good! I've made them for company sometimes and people really seem to like them. 

Our salmon was good last night; since it was still fairly nice outside, Rick grilled them. Tonight's dinner is split pea soup with the last of the Vermont Maple Cornbread that I made over the weekend. I pulled the soup out of the freezer on Tuesday night, then I forgot about it. (I'm not particularly fond of split pea soup, but I will eat it if I've made it. I don't like the canned stuff at all. I think it's one of Rick's most favored soups.)

Snow bound today and the options are a caesar salad with scallops or shrimp, eggs with hash browns and sausage or spiralized zucchini with spaghetti sauce and meatballs or sausage. I told Aaron he can decide later.
