i think i'll have a grilled cheese sandwich again today (and use up more of the extra shredded mild cheddar cheese), some tomato soup, some canned pineapple chunks, and some orange jello for dessert. maybe some mini pretzels too...
Well, I need to use up the rest of the beef from the pasties yesterday and not sure how I want to do it. Thinking of making beef stroganoff in the pressure cooker. We're going for groceries tonight, so I can grab some sour cream and some fresh 'shrooms. The beauty of the pressure cooker is that, from start to finish, it will take me about 30 minutes. Maybe with some glazed carrots and peas.
It was great! Thanks! I have an old 10-inch baking pan, about 3 inches tall, and I used that. I have an old recipe for a cornmeal-type pizza crust that I used to use when I made priazzo years and years ago. When I was talking to my son about it, he's the one who reminded me of that crust and I'm glad he did. I made the dough and divided it into 3 pieces. (The third dough ball is in the freezer for another time). The trick is to use a thin crust, but it still has to be sturdy enough to hold the innerds without falling apart.
I put the bottom dough in the greased pan, ladled a bit of sauce, the browned sausage with onions and peppers, then a good sprinkling of shredded Colby and Monterey Jack. I put the top crust on, then spooned more sauce over the top crust with another good sprinkling of cheeses, this time with some mozz mixed in.
For my sauce, I used my own pasta sauce without any meat and a little heavier on the oregano (I had read that PH's sauce was heavy on oregano). For the sausage, my BIL had made his own sausage back around Christmas time, and they had given us some of his bulk sausage and as well as a few links he had made. I took three smaller links and sliced them thinly, then browned them with my onions and peppers (I know I shouldn't have done it that way, but it worked out.)
Preheated the oven to 425 degrees. Wrapped the top of the pan in foil sprayed with Pam and threw it into the oven. Turned the heat down to 350 and baked the priazzo for about 20 minutes. Then I took the foil off and finished it for about another 10-12 minutes or so, just to get the top crust browned a bit. Took it out of the oven, wrapped it back up in foil and let it rest for about 15 minutes; that way, the whole thing didn't fall apart when we cut it. As it was, it was still a little messy, but we managed.
Served with a bowl of sauce for dipping. Did it taste like the PH Priazzo that we remembered? Well, no, not really. But it was really good! And we'll be making it again. We were pleased.
I really wish I could find some of those old PH pizza pans! My pan worked well; I've had that thing forever and a day and it has made more than its share of pizza. But those PH pans were nice.
Dinner last night was baked chicken and roast pork.... with a hefty side of family drama
Dad threw a tantrum because Mom didn't slice the roast pork thin enough or how she arranged the slices on a platter. Really. He's perfectly capable of using a fork and knife to cut his portion of pork to his exact reference but, no, he has to throw a tantrum and criticize everything.
had fusilli with tomato sauce and a skinless chicken thigh, which I cooked in the sauce.. It was delicious!! enough leftovers...have not had pasta for a long time...
Cut up potatoes and shrimp and sausage and cut up corn on the cob all lightly coated with oil and red pepper flakes, wrapped in foil and baked in the oven.
Supposed to be good on the grill too, but I haven't gotten around to getting one yet.
A friend passed me some homemade chicken salad at church Sunday. We will have that on a lettuce bed with crackers. I have some leftover baked beans and I will cook some corn on the cob to go with it or make a green veggie salad.
SIGH....I'm going to experiment tonight and get rid of a couple of things in my pantry that are taking up space. I have a box of turkey flavored Stove Top Stuffing (don't ask...I'll never use it for Thanksgiving again, but it wasn't THAT bad), a packet of turkey gravy mix, and a bag of country-cut mixed green beans, corn, and carrots. I'm going to combine them into a casserole, but I'm doing it vegetarian-style. I forgot to take the chicken bosom out of the freezer to add to it. We'll see. How bad could it be?
