Pork and sauerkraut over mashed potatoes with some applesauce. Our standard New Year's Day fare.

I am using the last of the sauerkraut that my BIL and I made back in 2015 (it's sauerkraut, so even if it's a bit old, it's been in the freezer and it's fine). And the pork is from the Christmas crown roast that we tucked in the freezer last week.

That shepherds' pie that I did NOT make last night...my hip was giving me fits, and I just wanted something I could throw in the microwave.  It's much better today, so I shall COOK.

Rick will eat supper at his cousin's house (going there to watch PennState in the Rose Bowl and they always have a big bash when they all get together). I believe I will have the leftover pork and sauerkraut (sans the mashed potatoes). There might be a cup of sauerkraut yet in the fridge.

I have a rotisserie chicken in the freezer from Wal Mart. I will make that with some mashed potatoes. Stir fried cabbage will be the green vegetable. I also have some cranberry relish that will be good with it.

OK...so I made the shepherd's pie...sort of.  I top them, when it's just me, and it is almost always just me, with Idahoan instant potatoes to make my life easier, and last night I'm not sure where my brain was.  I had the casserole dish with the veggies and the seasoned meat and mushroom soup sitting on the counter, I set the 2 cups of boiling water down next to it, opened the potatoes and DUMPED THEM IN THE CASSEROLE INSTEAD OF THE HOT WATER!  AWK!  EEP!  ACK!  Dumped the water in on top of the whole mess, stirred like a whirling dervish, and stuck it in the oven.  The texture is awfully funny, rather like a thick potato soup or chowder, but it's right tasty.  Gonna have leftovers tonight.  And possibly tomorrow night.

I microwaved a green bean casserole I had brought for Christmas dinner.. I'm also having a cornbread muffin with it. The casserole is pretty good considering it is store brought.

Vegetable salad with tuna and a couple pumpkin crescent rolls from the freezer.

A slice of ham. Rick and I are going to split a combo of a baked sweet potato and a small butternut squash.

Slice of left over grits casserole and a salad.  Easy-peasy tonight.  At some point, I MUST get some stew veggies.  I have stew meat in the freezer.

I'm not sure about tonight. Rick is bowling early, so as soon as I get home, I'll have to work on something. I was going to go through the freezer last night, but forgot about it. Will have to search tonight and see what I can find.

It is probably going to be a rotisserie chicken from Wal Mart. I have to be on the go this afternoon with singing at the nursing home, etc. I already have baked sweet potatoes and some leftover stir fried mixed veggies.

A couple of days ago, I made a stir-fry using some dried mushrooms.  I reconstituted them in chicken broth, and saved it when they were ready to cook.  Tonight, I'll use the mushroomy broth as the cooking liquid for a medley of Texmati, white, wild, and red rice, put that in a baking dish with some broiled chicken, and top it all with mushroom soup, lots of extra mushrooms added, of course (I always doctor up canned soup, even if it's just to be used in a casserole.)  I'll bake it until it's nice and bubbly.  We'll have grilled asparagus with it.  I had planned to grill salmon tonight, but it's gotten so cold that I want something creamy and comforting!  Leftover chocolate chip chocolate brownies for dessert, if anyone is still hungry.  :)

Chicken Soup!! finally made it.. came out really good! Have enough for another 2 days and then the rest in the freezer!!

two hot dogs (no buns), potato salad, maybe a few potato chips (though i'm leaning more towards some canned fruit), and several oatmeal peanut butter sandwich cookies.

Homemade macaroni and cheese with ham that my mom made, biscuits (she's also made those) and chocolate chip walnut cookies also made by her. :)

Rick mentioned toasted cheese sandwiches; we still have some of the baby Swiss leftover from Christmas. And vegetable salads.
