My 3-year-old cat Ludo was diagnosed with FLUTD a little less then a year ago.

Since then he has been on a mostly wet food diet. On most days I feed him two cans of wet food per day at four different feeding times (I rotate between Instinct Rabbit Formula, Wellness Core Turkey and Duck, and Prescription Diet C/D Chicken for his wet food) and feed him Pure Bites Chicken in Water as a treat every few days. I recently bought a treat dispenser that I fill with some dry food to keep him entertained, and occasionally one of his wet food feeding times is replaced by dry food on days where I know I'm not going to be at home to feed him. His dry food is Prescription Diet C/D that the vet recommended.

Over the last five days or so he has stopped eating as much as he should for his weight (He is roughly 12 pounds) and instead only eats about 1 can (maybe a can and a half) of wet food per day. The second and third day I noticed this I gave him some dry food and he ate all of it happily - though unfortunately that was the last of the dry food and the vet was closed the last two days. I've also noticed that instead of eating his full bowl of wet food he waits until the kitten, Avi, is done with his wet food before going over to Avi's dish ( totally ignoring his own full bowl) and licking the bottom. I've had some luck with pouring some of Ludo's original food in to Avi's dish and getting him to eat that but if I pour too much he'll stop eating. And if I manage to force him to try a bite of his food, he'll usually start eating most of his dish.  Either way, he still isn't eating enough.

He isn't showing any signs of sickness, hasn't lost any weight, and seems as active as he always is.

Looking for suggestions on how to encourage my cat to eat again. Also, looking for suggestions on dry food to feed cat's with FLUTD?

Honestly, I wouldn't risk feeding a cat with a history of urinary issues dry food. Dry food is the biggest culprit for urinary issues and that's a risk I wouldn't be willing to take if this was my cat. Kibble is addictive, if you have it around most cats will go for the kibble over the wet food. Offering freeze dried meat treats is a great and much better alternative, there is more than just chicken you could use turkey, duck, beef, Orijen also makes some good just meat treats too that would work in a treat ball. It sounds like he may be bored with his wet food rotation, so try adding some other foods. Weruva, Tikicat, Soulistic, are some good options to add.
