I can't tell if they cook the food then air dry it, or if it's air dried raw.

I would think that if it were raw, it would, by law, need to be labeled as such?

My two 4 year old cats love it, but it's less food then they are used to eating, so they are always crying for more food now.

I add water to this, it's not cakey dry, more like a soft jerky dry, so it absorbs it well.

Their poop is super stinky, but they have only eaten it for three days, so I hope after some more time it will stop stinking.

I've never used it. The ingredients look fine to me. I probably wouldn't feed it exclusively unless you're adding a lot of water. If your cats are acting hungry they might need more food.

My cats weigh 11lbs each, any more then that and they would be fat.

They play in the morning after they eat for about an hour and at night after they eat for about an hour.

At 178kcals per 1.5oz, would giving them each more then the daily 2 oz recommended cause them to gain weight, I wonder?

So how much are you giving them each? At 11lbs they each need around 220 cal per day, roughly.

2 oz each a day, with water added.

Well, that seems like enough, but you may want to break it up into smaller meals to try and keep them full longer. Otherwise you may want to add in some other food and maybe just use that as a snack.
