Help with food allergies

Hi! Hoping to gain some insight here....

I have two cats, Peanut and Reggie. Peanut is allergic/intolerant to chicken, turkey and eggs and her sneezy allergies seem to be triggered if a food has too much fruit/vegetable. I don't like to feed them too much fish for multiple reasons (history of crystals in both and the litter box smell is terrible). They also do not like pate. 

Is there a morsel/shred limited ingredient, single-protein food out there that has more variety than chicken or turkey?

They loved Tiki (too much fish), weruva cat's in the kitchen (too much fish, even the non-fish varieties), and now they're liking Soulistic (but again, too much fish, even in non-fish varieties). 

I've repeatedly tried pate LIDs but they won't eat them. Even after a week or two, when I figure "at some point they'll choose this over starvation", but they won't. (I do give them kibble, also.)

How do you know they have these allergies? did you have allergy testing done? The issue with commerial foods and allergies is that often times cats are allergic to something in the foods, some filler or additive, rather than the actual protein. A true chicken and egg allergy would be incredibly rare. Have you tried feeding raw? Rad Cat? They do use eggshell calcium, but unless you've had allergy testing that confirms an egg allergy I'd try out Rad Cat and see if there's a reaction.

I haven't done testing, but I can promise you she has a chicken allergy. You're welcome to come feed her chicken and then clean up her long hair, my house and the litter boxes to prove it. lol The egg allergy is more of an observation/guess.

I have not tried raw food because I have a mortgage to pay. :) 

Thank you for your analysis, but I'm still looking for a reasonable affordable LID that isn't pate and has more options than chicken/turkey.

There aren't any LID foods that aren't pate
All of the commerical ones (NV, Merrick, Blue Basic, Natural Balance, etc) are pates.

Raw and home cooked food doesn't need to cost more than a mortgage
Both can be affordable. One easy way to do either is to use a pre-mix such as EZComplete or UStew or Alnutrin. The basic instructions are to take 2 lbs of meat, add in the pre-mix, add in water, stir to combine, portion the mixture out into serving size containers or baggies, and place a few in the fridge to use right away and freeze the rest. There's a forum here on TCS that has lots of info on raw and home cooked diets.

The entire point is that you can't diagnose a true allergy based on feeding foods that contain other ingredients. If you really want to know if she actually had a true chicken allergy you have to go towards homecooked or raw in order to eliminate all other more common suspects.

And no, raw food isn't expensive. I feed raw to 10 cats plus cooked to ferals and still pay my mortgage.

If I were to magically find the time to start making food for them, where would I even buy rabbit, venison, duck that isn't sold at a specialty store and at specialty prices?

Independent pet stores often sell chubs (rolls) of frozen raw meat for pet food use. Some brands you can buy are Primal, Bravo, and Blue Ridge. Hare-Today.com is a popular online place to buy meat for pet food use.
