Any ideas as to why chicken can cause allergy?

Following on from the kitty with chicken allergy thread....does anyone have  ny idea why chicken would cause this. My cat Bear also has chicken allergy. Unyet can eat turkey forever. Ive never been able to find information as to why.Ive had bog standard chicken. Ive bought top quality free range organic local butchers chicken. Supermarket organic chicken.Latter 2 still, despite the diet they must be on, cause the dreadful itching. However weirdly 2 supermarkets have normal chicken that cause no/ minimal eventually reaction...I find that strange. So why does it happen I wonder?

I do not think anyone knows the answer to that. I mean, why are some people allergic to pollen and others not? Same question there. No answer...

you can just try to avoid the allergen and deal with it as best you can. 

My cat is allergic to chicken also..but he has IBD--no skin issues. Chicken or chicken products are in most of the cat foods--some have eggs also, and animal digest..avoid these also. 

Best bet would be a novel protein or limited ingredient food. Or go raw...
