Is my kitten getting enough fat? (long prologue about poop)

My kitten, Small Mammal, is about 12 weeks old. A week ago, she started getting loose stools and needed the litter box 4-5 times a day. (You can set your watch to it.) A number of factors could have contributed to this: stress from getting her nails clipped one day and a trip to the vet the next (she does NOT like the car), we upped her food from 3oz wet food/day (1.5oz breakfast, 1.5oz dinner) to 4.5oz (3oz/1.5oz), and we tried a variety of wet food brands without transitioning (the shelter shop lady told us we only need to transition dry food). (Side note, we keep a bowl of Taste of the Wild all-stages dry kibble available all day that she likes to snack at.)

Her evening and overnight poops were of the melting-ice cream variety, but the post breakfast and mid day poops were straight up pudding. There was also a lot of it with each movement. She still has an appetite and drinks water. She's a little more lethargic, but will become playful after a particularly large poop. After 5 days of this, we got rid of the variety of canned foods and stuck with Nutra Max Chicken and Liver for kittens, the same stuff we fed her for weeks without incident prior to her current issues.

I gave a stool sample to the vet which came up negative. We've also been giving her a probiotic. Following the advice of other sites, we fed her plain chicken with a little bit of potato and canned pumpkin last night and this morning. Almost immediately, her poop started firming up. She hasn't even had her post-breakfast or noon poop yet, so we think it's working in restoring her regularity.

However, I worry if she's not getting enough fat or other nutrients like taurine this way. Will the dry kibble take care of that? Should we start reincorporating the canned food again? She's due back at the vet for more booster shots Thursday, but I wouldn't want to cause any nutritional deficiencies from 4 days of human food, especially with lean meat.

Long post, I know, but any advice is appreciated.

Dry kibble is 100% nutritionally complete (well, it SHOULD be), but feeding the chicken and pumpkin for a couple of days should also be ok.  Honestly, I've never heard of adding potatioes...we usually recommend adding white rice boiled in the chicken water.  AND NO seasonings whatsoever.  She'll get some taurine from the chicken.  The main thing she will NOT be getting from the chicken/rice mixture is enough calcium, that's why she can't be on this too long...plus it just isn't nutritionally complete.

It's probably the fiber in the pumpkin that's firming up her stool.  Once her digestive tract has had a chance to "rest" then you can try her on canned again and see what happens.  If it starts up again, then I would seriously look at the ingredients in the Max Chicken and Liver and possibly switch over to Nutro Natural Balance Kitten.
