good afternoon! 


a couple days ago, i pulled a container out of my freezer to thaw in the fridge. i thought it was some chili, that i'd frozen the leftovers. yesterday evening i took the container out of the fridge and was going to heat up some of the chili for my dinner, but......it turned out that it was not chili! it was some homemade enchilada sauce. i had a couple hard boiled eggs, and some raw cauliflower and celery pieces with salad dressing as dip for my dinner instead. so i had to quickly 'switch gears' and plan what meals i was going to make to use up the enchilada sauce.

with this on my mind, for today's Question of the Day......

When was the last time you needed to 'switch gears' for a meal? And...What was the 'Oops!' moment -- ingredient you didn't have, something not thawed enough yet, restaurant you had planned to go to was closed, meal didn't turn out well (for one reason or another), your plans changed, etc?

i'll start!

yup, i had to 'switch gears' last night. the nice thing is that i generally have some supplies laid in, a basic pantry with items i use often, as well as various meats in my freezers -- both cooked and uncooked. so i thought through what i'd need to have to put together a batch of chicken enchiladas as well as a batch of beef burrito casserole. i had everything for those two recipes except cream cheese! i figured i could get by without the cream cheese for the chicken enchiladas though. so i gathered the canned ingredients together, and pulled out of the freezer some cooked diced chicken, a package of small flour tortillas, and two zipper bags (about 1 1/2 cups total) of shredded mild cheddar cheese. this morning i cooked some rice, and tomorrow morning i'll put together and bake the chicken enchiladas. i'll freeze half of them, then make the beef burrito casserole a few days later. that will use up all the container of enchilada sauce, and probably handle about two weeks worth of lunches for me.

I had taken out a pretty large piece of cod from the freezer to defrost for a mid-week dinner. My intention was cook it before my fiance's daughter came to visit Friday morning. But, I got mixed up what day was what and realized Thursday night - that it wasn't the Wednesday night I thought it was :0  The fish was still rock solid frozen.

Our plans had been to take the DIL out for dinner in lieu of me cooking sinceI had worked that day and knew I would be too tired to cook.  But, now I was committed to having to do that because I sure wasn't going to throw out a beautiful piece of fish and sure couldn't refreeze it either.

I had some fresh pasta in the fridge from that weeks market box and decided to defrost a small bag of shrimp just in case the fish wasn't enough for 3 people. Roasted the fish and shrimp with cut up zucchini, leeks, garlic, some herbs, EVO, etc.  Broke up the cod into smaller chunks once cooked and threw the pasta into the pan, added in some pesto, placed the shrimps on top of it all, and voila! Dinner.

I wasn't even sure if this was going to "work" but luckily, it did.  I never had used fish fillets in pasta before. I wasn't thrilled to have had to cook dinner but in the end, it worked out.  But I was exhausted

OK..don't laugh.  I bought some Bird's Eye seasoned steamables.  I love most of them, and thought, "Well, why not give the Brussel sprouts with sea salt and cracked pepper a try?", utterly forgetting in the excitement of finding a new one that I do NOT care for Brussel sprouts unless they are sautéed in bacon grease with almonds.  OH BLECH!!!  They were the typical "cooked sprout gray-green" and, to me, nasty, although a sprout lover would probably like them.  What to do?  I am constitutionally incapable of throwing out food...SO...I covered them in Sweet Honey barbecue sauce and ate them anyway!  One of the advantages of living alone...If I'm happy, and the cat is happy, I don't have to worry about it. 

I had bought 5 dratted bags of the things, so I had 5 meals of barbecued Brussel sprouts!

Garlic and lemon juice take the bitter out of brussels sprouts. I like the Birdseye steamables but only with "doctoring"; I couldn't eat them plain.

Hmm, can't say I've had to "switch gears" when it came to food recently. I just eat whatever whenever so it all turns out mostly the same :tongue2:.

The last time I had to switch gears for a meal was the time I ran out of Fancy Feast and had to bake chicken.

The grocery story is only 5 minutes away (and there are 3 at the same intersection) so I shop every other day or send a minion.  Now that I am trying to eat grass fed beef and chicken I am buying larger quantities on sale and freezing.  Still sometimes wind up running out at the last minute.

The last time we had to switch gears was before Christmas.  DD and I decided to make 3 or 4 kinds of cookies for neighbors and DH's work.  He arrived home and we were still at it so I put DS in charge of ordering and retrieving pizza.  DH just laughed and said ok.  It's happened before.


When the kids were younger I use to 'run out of food' on purpose so we had to go out to eat.

I have to do it when, I have bought some deli chicken salad (delicious) or some rare deli roast beef, and I think I am going to have another meal of it.  Then I determine when I purchased it, although it may be ok to eat, I  say no, maybe it is too many days in the fridge.  So I have cheese and crackers, or something like that.  I am trying to buy smaller amounts and just get what I need.  To throw it away is wasted money.  Most of my switch gears is because of perishables like this.  Although I will go longer on milk in the fridge.

Wow! you sure did think fast, on how to use that cod!
  and, it's really cool that you got to try fish fillets in pasta too!

I think I was channeling my ex-MIL. I remembered she used to put whole sardines in pasta sometimes (Sicilian background!). It could have used a bit more "oomp" of some kind, more pesto maybe, some more garlic but overall it was a hit with everyone.  I might even do it again for just the two of us.

Stuff not defrosting in time is always one of those "oops" moments of cooking.

Years ago, we'd just defrost on the counter but now everyone knows better not to.  Or at least, pretend to...

i like brussel sprouts, but only fresh cooked ones.

Not sure when the last time was, or why, probably not that long ago, but the backup plan is usually takeout of some sort.

that sounds so nice, and convenient! mmmmm......grass fed beef! several years ago, i bought a quarter of (grass fed) beef. so very tasty! i also bought a couple dozen eggs from the same farm -- those eggs were heavenly!


i like that solution -- ordering pizza!
   and i'm sure the aroma of cookies baking was wonderful!

ahhhh, i can understand that totally!
   maybe you could freeze part of the rare roast beef, then thaw it when you're almost finished with the part you didn't freeze...? i do that when i buy a 30 oz container of wegman's thin sliced sandwich meats -- i usually buy a container that's half smoked ham and half honey turkey, each type sealed individually. when i open the ham, i immediately freeze half of it, then eat the rest in sandwiches. once i've finished the ham, i do the same with the turkey. then i switch back to ham, thawing the rest of the ham, then thaw the rest of the turkey.

mmmm...i love cheese and crackers! always a good solution!
