Help! Weird cat behavior

I know cats are always weird... But I don't know how to handle this one. My fiancée and I got a new cat yesterday. He found her in the shop he works in - they saw her running in there about a month ago, and then she ran off and only resurfaced again the other day so he decided to keep her.

She's very nice sometimes (including giving kisses, rubbing her head against you) etc but on a dime she'll turn mean and start meowing, hissing, and trying to bite. Sometimes she even bites and kisses both at once.

She's nervous about things, understandably including her new environment which includes two small dogs. She is kept apart from them by a gate though.

I just don't know how to get through to her. It's always like one step forward and one step back and I'm just not sure how to relate to her. Also it sucks not knowing which extreme she'll be at when we approach her.

Does anyone have an opinion on if that's just her reaction to her new home or just her personality? Also we haven't been able to get her in at the vets office yet but it seems like she is in a little bit of pain so that might have to do with it.

It's best to not judge her to much right now it takes time to settle

in...but with Over stimulation cats can just turn on you

as if possessed for no apparent reason right when someone is

lavishing attention on them! Takes time to learn their body language ;)

*Best thing to offer her is a safe

quiet spot away from dogs, drafts, main traffic areas.
