I have a very active young cat who hates staying indoors and has caught a massive case of spring fever. Problem is, I live in the woods and don't want him eaten by a coyote. I'm thinking that we will have to walk him on a leash somewhere around 4-10 times per day to burn up his excess energy.

I have a leash and harness for him and it works reasonably well, but for walking him that much, I'm looking for something easier to use and less easy for him to slip out of--preferably a jacket style harness. Anybody have any recommendations for something along those lines?

Yes, try a Kitty Holster. http://www.kittyholster.com/ They are easy to put on and difficult for the cat to get out of.
That's a good style.  I have one similar to this for my cat.  She did try to back out of it once when something startled her, but she couldn't get out of it.
