Do you like grilled cheese? How do you like them?

Grilled cheese is a big weakness of mine. 

Here's my favorite recipe - no ingredient amounts given.  I've been doing this for decades and it's all eye balling.

2 slices sourdough bread

Really good aged cheddar cheese (shredded). I prefer Grafton Village made in Vermont.

Minced fresh chives

Mayo

Dijon mustard

Freshly cracked black pepper.

Butter for the pan

Mix in small bowl mayo and mustard (about 1 tablespoon each, can do more or less of both but make sure you have enough to spread on the bread).  Add in chopped chives (also about 1 tablespoon) and several turns of fresh cracked black pepper.

Spread mixture on 2 slices of sour dough bread. This is the INSIDE of the sandwich - not the outside.

Pile up the cheese onto the mayo/mustard mixture.  Use a lot! You want this to be really ooey gooey.

Melt butter in a non-stick pan.  Place sandwich face down and brown first side very well.  Turn over and brown the other side.  You want it crispy - not soggy so keep it in there until it's really crisp!

Place in a hot oven for a few minutes if you need to melt the cheese a bit more.  Sometimes, the bread might brown quicker than you want it to although since the cheese is shredded it usually melts by the time you plate it.  I don't usually need to do this but it will help especially if you're making a lot of them that need to be held when short on pans.

I also love plain old american cheese and white bread - I've taken to using mayo instead of butter on the outside because you can use a lot less of it and it tends to crisp it up better.  Bacon inside is killer.

FYI I just found out there's a grilled cheese shop opening up the block from my office and...another one that opened in a nearby town.  Tom and I are DOOMED LOL

Love grilled cheese, but unfortunately due to a dairy allergy that has gotten worse over the years I can't have it anymore. Vegan cheese just isn't the same.

I like them with Kraft singles (classy, huh?) dipped in tomato soup.

Kraft is the quintessential cheese for this kind of sandwich! I personally use Land O'Lakes white American but would not turn my head away if it were Kraft - it's what I grew up with

The stuff that you get in the grocery store like Daiya isn't very good. I got some cheeze from this place in California. It's artisan and very good. It's also pricey but all proceeds go toward the sanctuary and caring for the animals. The people that make this used to make award winning goat cheeses before they became vegan and made the farm a sanctuary. I have tried several of the cheddar cheeses and the garlic herb chevre. All are good. My favorite is the jalapeno habanero cheddar. It is not nearly as spicy as you'd think it would be going by the name. I put it on a grilled english muffin and it's really good.

Thanks for the recommendation! It actually looks really good! Do you have any idea how long the cheeze lasts once opened? I swear, I'll pay $8 for some of them at Whole Foods, and you have to use them within 7 days. I can't eat a whole block of cheese in a week. I didn't see any info or FAQ on the website about it. Plus since 4 is the minimum order, I don't want to have 4 different cheezes go bad within a week.

I've had mine a lot longer than that. Weeks. It's still good. I just had some on Sunday. it's very high quality. I'm getting some of the American with my next order. The owner adds a hand written thank you note with the order. I like buying from them because it supports the sanctuary. I used some of the plain cheddar on a veggie burger. Very good. Nice sharpness. 


The shipping will seem high because they have to pack it with freezer packs but they do a very nice job in packing it and the freezer packs are reusable. I think I paid $12.95 for shipping but according to the USPS label, it actually cost them more than that. I tried the Daiya shredded mozzarella and I don't like it at all. I'd rather eat my pizza without cheese than use it. Speaking of which, if you haven't tried Amy's frozen roasted veggie cheeseless pizza, you must. It is really good!!

I like 2 slices of kraft (or black diamond) cheese slices, 2 slices of ham and a pickle. It goes bread, cheese, ham, pickle slices, ham, cheese, bread. Mmmm

I have 2 young children.  Grilled cheese is in the regular rotation here.  We will certainly have to celebrate today.

My favorite way is just the traditional american cheese on buttered bread; usually a light wheat for us.  I like to have it with tomato soup; the kids prefer ketchup.  My Mother made a home made tomato soup a couple weeks ago and sent a jar home with me.  It was AMAZING with grilled cheese!!

I do have some recipes that you use rye bread and add turkey, tomato, banana pepper and bacon and grill it all.  It's really good!!  But not something I make too often.

I'm an avid grilled cheeser myself!  My husband makes them sooo well... just typical Kraft singles but we either use the newer Pepperidge Farms Asiago Bread (to die for) or what I refer to as "birdseed bread" because it's got like 7 grains and there are always some sort of seeds on it, but not in it.  I simply love a grilled cheese on rye with American, provolone and swiss... one slice each. OH MY ... so tasty, I usually want a second sandwich but can't get out of my own way after I eat the first so it never gets done.  
  Great post and I'll be SURE to have this for dinner tonight... along with a small cup of soup. It's raw and damp here today.

wow.. I have not had a grilled cheese in a long time! I think I will have that for dinner tonight with some tomato soup.

Typical 2 slices of bread, 2 slices of american cheese, and sliced tomatoes if I have them!

I had my grilled cheese today. Butter in the skillet, Kraft Mayo on the bread, thick slice of cheese, 3 thin slices Black Forrest Ham. Yum.

I actually had a grilled cheese and turkey sandwich today. I like it with lunchmeat, not just plain cheese. And with mayo, sometimes I'll add pickles but I omit the pickles if I am really hungry today. We bought nut and seed bread from costco (I think it's wheat?) that has pumpkin seeds too. So tasty!
