My diabetic cat has recently entered remission, and he hasn't been eating for the past few weeks

My cat, George, is a tabby cat. For the past four, five years or so, he has been a diabetic and on insulin twice a day. Recently, through two hypoglycemic event scares, the vet eventually came to the conclusion that he was in a remissional state, and to be completely taken off insulin. For the past few weeks, our cat George has refused to eat. Recently, we've been forced to create a broth of food and inject it into his mouth. This has recently been upgraded to have a probiotic goat's milk mixture. 

I would be happy to provide any additional information about George if necessary. Thank you.

You definitely need to get George to eat. Try adding water to canned food until its soupy and syringe feed that. Or temporarily try baby food. These are the safe ones to feed: http://www.thecatsite.com/t/225595/anyone-else-have-an-only-gravy-licker/60#post_3749885

Has the vet examined George since he stopped eating? If not, that's the first thing you should do. The vet will likely run tests to determine why George is not eating. Make sure the teeth are checked as bad teeth makes eating painful.

A diabetic cat in remission can't become hypo so that's one less worry for you
Do you regularly check Geroge's blood glucose level to make sure it's not creeping back up to diabetic levels? Do you test the urine for ketones? I highly recommend that you post over on the FelineDiabetes.com message board and get advice and help from experienced members there. Situations like yours have  come up on the board.
